As a Sous Chef at Platinum Dining Group, you will play a critical role in the smooth operation of the kitchen by assisting the Executive Chef in managing prep and production schedules, ensuring timely completion of all culinary tasks, and guaranteeing that each dish meets the highest quality standards. The position demands meticulous attention to food costs by adhering to ordering and preparation pars, maintaining proper portion sizes, and minimizing waste. Furthermore, the Sous Chef is responsible for training kitchen staff and ensuring strict adherence to established recipes, procedures, and company policies.

This role also involves stepping in as the Executive Chef during their absence and fostering an environment of professionalism and respect that supports teamwork and cooperation. The Sous Chef will oversee service during operating hours, enforce sanitation and safety standards, manage dress codes, and ensure compliance with cash handling procedures. Job Requirements

  • Experience in full service, upscale, high volume cuisine
  • Current Sous Chef with a desire to grow to Executive Chef
  • Ability to maintain food cost controls
  • Strong leadership and communication skills
  • Ability to work under pressure in a fast-paced environment
  • Familiarity with sanitation and safety standards
  • Flexible to work various shifts when needed

Job Qualifications

  • Outstanding communication and leadership skills
  • Excellent emotional self-awareness under pressure while maintaining a respectful demeanor
  • Ability to multitask and take direction in a high volume, team-oriented environment
  • Good sense of taste and smell as well as good manual dexterity to operate kitchen equipment
  • Self-driven to produce high quality work
  • Familiarity with menu costing procedures
  • Must be a crowd pleaser – enjoy making guests happy
  • Knowledge of a second language, preferably Spanish, is a plus

Job Duties

  • Assists the executive chef to ensure that the kitchen is running smoothly with prep and production being completed in a timely manner and all dishes are prepared correctly
  • Helps maintain food cost by adhering to order and prep pars, proper portion sizes and minimizing food waste
  • Trains kitchen staff and ensures they are adhering to established recipes, practices and procedures
  • Acts as executive chef in his/her absence
  • Fosters a climate of professionalism, cooperation and respect between teammates
  • Enforces company standards, policies, and procedures, including sanitation, safety, dress codes, and cash handling
  • Oversees service during all operating hours
