The role of Sous Chef at Pendry Chicago is pivotal to maintaining the high culinary standards and innovative dining experiences the hotel is known for. This position offers a blend of leadership, creativity, and operational responsibilities that ensure smooth kitchen operations and outstanding food quality. The Sous Chef will assist in managing daily kitchen activities, including recruiting, training, and supervising cooks, while implementing cost control measures to maximize profitability without compromising quality.
Key responsibilities include preparing and ordering all menu items, managing inventory systems to maintain proper stock levels, executing timely food production and plating, and contributing to menu development alongside the Head Chef. This role requires a strong focus on food safety, sanitation, and compliance with all relevant policies. The Sous Chef is also instrumental in delivering exceptional guest experiences by creating WOW moments that leave lasting impressions.
The ideal candidate for this position is passionate about food and beverage operations, excels in team leadership, and is committed to exceptional service. They must be open to continuous learning and development, trustworthy, and possess integrity. A minimum of one year of culinary supervisory or management experience is required, along with excellent communication skills and proficiency in Microsoft Office and other relevant technology. Job Qualifications

Job Duties
- Assist with the daily operation of the kitchen including recruiting, hire, train, and supervision of cooks
- Implement cost control measures and revenue enhancement strategies to maximize profitability while maintaining service quality
- Prepare and order all items for all menus, create order sheets and inventory systems to ensure proper stock levels
- Execute all productions and plating in a timely manner
- Assist in maintaining the overall food and labor cost thru recipe costing and scheduling standards
- Oversee menu development with head Chef, culinary innovation, and food presentation, ensuring offerings are creative, on-trend, and aligned with guest preferences
- Ensure the department abides by all safety and sanitation policies
- Deliver on guests' expectations and have the desire to create WOW moments
- Perform additional duties as assigned that may be outside the scope of duties, based on business needs
