We are currently seeking a Sous Chef to join our Main Kitchen team at Beverly Wilshire. The Sous Chef role is pivotal in upholding our high standards by planning, organizing, and leading kitchen staff to prepare exceptional cuisine that aligns with Four Seasons' world-renowned reputation. Reporting directly to the Executive Chef, the Sous Chef is entrusted with managing kitchen operations, ensuring superior food quality and consistency, and fostering a motivated, high-performing culinary team.

The ideal candidate will have experience in luxury, high-volume environments and demonstrate leadership qualities that inspire and develop team members. The role involves creating innovative seasonal menus and daily specials that reflect current food trends and elegant presentation, managing food costs, ensuring compliance with quality standards, and maintaining effective communication between kitchen and front-of-house staff. Flexibility to work varied shifts and weekends is required to meet the dynamic needs of our vibrant hotel environment.

Job Duties

  • Motivate and develop an effective team to achieve common goals
  • delegate tasks and responsibility to ensure high performance
  • manage change to enable individuals and team to meet current and future business needs
  • schedule, organize, supervise, and communicate effectively to all employees
  • supervise production needs by assessing daily business levels and house counts
  • create and execute seasonal menu items and daily specials that showcase current trends and food styling
  • cost all menu items and manage food cost
  • check all daily menu items for cold and hot preparation and delegate the required work to the entire department making sure they are correctly prepared and in proper amounts needed
  • ensure that proper quality of mise en place, execution and presentation of all menu items are at Four Seasons standards
  • fill all food requisitions for kitchen needs
  • suggest new and better ways of doing things and initiate new product developments
  • communicate and execute core standards and all menu changes directly to kitchen and front of the house staff using current tools such as pick up charts and menu tastings
  • work effectively in all outlets with different individuals, being able to work flexibly by carrying out a range of tasks and adapting to changing priorities and job requirements
