Job Description

Zuma San Diego is soon to open its doors, introducing its world-renowned contemporary Japanese dining experience to the West Coast. Zuma is an internationally acclaimed restaurant group known for its vibrant atmosphere, bold flavors, and an exceptional approach to hospitality that celebrates the mastery of Japanese culinary traditions. We are currently seeking a talented and passionate Sommelier to join our opening team. This role will focus on curating and managing the wine program, enhancing our guests’ dining experience by offering expertly selected wine and sake pairings. The ideal candidate will have a deep knowledge of modern Japanese cuisine, wine regions, grape varietals, sake production, and service standards. As a Sommelier at Zuma San Diego, you will work closely with our culinary team to develop and execute wine pairings that elevate our menu’s flavors and complement the unique dishes we serve.

In addition to selection and pairing, the Sommelier will manage inventory, train staff, and maintain the highest standards of wine service to ensure that every guest enjoys an exceptional beverage experience. You will play a pivotal role in shaping the beverage program, promoting sales of wine, sake, and other beverages, and supporting overall restaurant operations. This position offers a dynamic work environment where teamwork, passion for food and drink, and attention to detail are essential.

Our Sommelier will be responsible for providing personalized recommendations based on guest preferences, budget, and food choices while educating both guests and staff about the nuances of wine and sake. You will oversee storage and service procedures to preserve quality and teach staff about tasting techniques, grape varietals, and wine service etiquette. Job Requirements

  • Education in hospitality, sommelier certification or related field preferred
  • Minimum of 2 years experience working as a sommelier or in an equivalent beverage management role
  • Excellent interpersonal and communication skills
  • Strong knowledge of wine and sake
  • Ability to manage inventory and perform stock assessments
  • Experience training and mentoring staff
  • Willingness to work flexible hours including nights, weekends, and holidays

Job Qualifications

  • Certified Sommelier or higher certification preferred
  • Previous experience as a Sommelier in a fine dining restaurant or similar upscale establishment
  • Deep knowledge of wine regions, grape varietals, production methods, and wine service techniques
  • Passion for Japanese cuisine and culinary experiences
  • Strong team player with excellent customer service skills
  • Ability to work flexible hours including evenings, weekends, and holidays

Job Duties

  • Assist guests in selecting wines and sake by offering personalized recommendations based on their preferences, budget, and food choices, and providing information about grape varietals, wine regions, producers, and tasting notes
  • Conduct weekly inventory assessments to ensure accurate stock levels
  • Collaborate with the culinary team to develop wine pairing, guidance and expertise to guests to enhance their dining experience and promote sales of wine, sake and other beverages
  • Oversee wine service standards and procedures, ensuring that wines are stored, handled, and served according to best practices to preserve quality and enhance the guest experience, and training and coaching staff as needed to maintain high standards of service
  • Conduct wine training and education sessions for staff to increase their knowledge and understanding of wine and sake, including grape varietals, production methods, tasting techniques, and service etiquette, to enhance their ability to engage with guests and sell wine effectively
  • Support overall restaurant operations by assisting on the floor, including clearing tables, running food and drinks, and other tasks as needed to ensure smooth service
