Job Description

Seminole Hard Rock Hotel & Casino Hollywood is the flagship casino resort of Hard Rock International, owned and operated by the Seminole Tribe of Florida. This world-renowned entertainment, gaming, and hospitality destination is located in Hollywood, Florida, spanning across 87 acres of the Hollywood Seminole Reservation. The role offered is for a highly experienced Beverage Manager, responsible for overseeing and managing the beverage operations within the resort’s fine dining Italian restaurant concept and associated bar and lounge areas. Reporting directly to the General Manager, this position demands a mix of creativity, leadership, operational expertise, and a deep understanding of beverage program development. The Beverage Manager’s primary focus includes concept creation and overall management of the cocktail program encompassing menu development, recipe creation, cost control, and staff training. This individual will ensure a consistent, high-quality guest experience by implementing policy, procedures, and training initiatives that uphold the brand’s standards. The role involves hands-on management responsibilities such as scheduling, facility maintenance, event preparation, interviewing and hiring staff, enforcing accountability for job duties, operating opening and closing procedures, and maintaining compliance with health and safety standards. A commitment to responsible alcohol service and compliance with the Seminole Tribe’s and Gaming Commission regulations is required at all times. The manager must also regularly assess the beverage program’s effectiveness through audits and quality tests and adapt the program in response to guest feedback and emerging trends. This position supports operational budgets, staffing plans, and beverage inventory control to maximize profitability while maintaining exceptional guest satisfaction. Beyond operational duties, the Beverage Manager plays a key role in staff development, training, coaching, and motivation to build a cohesive, efficient team that reflects the company’s core values of communication, integrity, fun, respect, accountability, passion, and dedication. Job Requirements

  • Associates degree

Job Qualifications

  • Associates degree required

Job Duties

  • Must adhere to Seminole Tribe's policies and procedures
  • Conduct themselves in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures
  • Responsible for the concept and creation of the cocktail program including menus, cost of sale, recipes and training
  • Design and implement training standard operating procedures for bar staff and cocktail development
  • Regularly audit and test to ensure compliance and consistency of cocktail program
  • Ensure proper drink preparation and adequate inventory for area of responsibility
  • Act as MOD on shift as key liaison between division and casino and hotel operations
  • Maintain compliance with established staffing and cost budgets
  • Coordinate employee staffing and work schedules
  • Develop department members' knowledge and skills through education, training, coaching and corrective counseling
  • Stay abreast of current trends and practices and communicate pertinent information to management, peers and team members
  • Responsible for proper planning and operation of all beverage functions
