The role of Senior Sushi Sous Chef offers a unique opportunity within Bon Appetit to lead and support sushi-focused culinary operations at a campus setting. This position works closely with the Campus Executive Chef, Sushi and Asian Programming, to manage daily sushi production, ensure menu consistency, and maintain quality at all times across campus cafes. The Senior Sushi Sous Chef will play a crucial part in expanding the sushi offerings and developing Asian-inspired menus, combining creativity with solid culinary expertise. This is a hands-on leadership role requiring supervision of hourly culinary associates, oversight of food safety practices, inventory management, and food cost controls specific to sushi preparation. The candidate will also support catering functions including action stations for events, which require precision and professionalism. A typical work schedule runs from 8:00 am to 6:00 pm, with occasional flexibility needed for evening catering events.

Job Requirements
- Education level of A.O.S. Degree in Culinary Arts or equivalent culinary certificate
- Relevant culinary and kitchen leadership experience, especially with sushi preparation
- Strong knife skills specific to sushi techniques
- Knowledge of foodservice operations including production and sanitation
- Experience in managing food costs and inventory
- Ability to supervise and mentor culinary staff
- Flexibility to work 8:00 am to 6:00 pm with additional hours for catering events
- ServSafe certification preferred
- Proficiency in Microsoft Office and computer systems
Job Qualifications
- A.O.S. Degree in Culinary Arts or culinary certificate with relevant experience
- Progressive culinary and kitchen leadership experience, preferably in sushi focused or high volume environments
- Strong sushi knife skills and knowledge of traditional and contemporary sushi techniques
- Experience in complex foodservice operations
- Catering experience preferred
- Knowledge of food trends, quality standards, production, sanitation, and food cost controls
- Proficiency in Microsoft Office, Outlook, and general computer systems
- ServSafe certification preferred
Job Duties
- Support the Campus Executive Chef with oversight of sushi and kitchen operations across campus cafes
- Lead daily sushi preparation and execution, maintaining high standards for quality, freshness, and presentation
- Assist with planning and developing sushi and Asian inspired menu offerings to support program growth
- Supervise and mentor hourly culinary associates
- Manage food cost controls, inventory, and ordering processes
- Support sushi production for catering, including action stations and high level C suite events
- Execute catering functions with precision, creativity, and professionalism
- Assist with rollout of new culinary programs in partnership with marketing and culinary teams
- Maintain strict adherence to food safety, sanitation, and production standards
