Job Requirements

  • High school diploma or equivalent
  • several years of experience in professional kitchen operations
  • culinary certification or degree preferred
  • thorough knowledge of food safety and sanitation practices
  • ability to work flexible hours including early mornings and weekends
  • physical ability to work in hot and cold environments
  • valid food handler's certification
  • strong attention to detail
  • excellent communication skills
  • ability to train and manage large teams
  • ability to multitask and manage production flow
  • willingness to take initiative and work hands-on
  • comfortable working in a fast-paced, high-volume kitchen
  • ability to adhere to company policies and standards.

Job Qualifications

  • Proven experience as a sous chef or in a similar senior kitchen role
  • strong leadership and team management skills
  • proficiency in large-scale food production
  • expertise in food safety standards such as HACCP, FSMA, SQF, and USDA regulations
  • excellent culinary skills with attention to detail
  • ability to train and develop kitchen staff effectively
  • strong organizational and multitasking abilities
  • good communication and interpersonal skills
  • data-driven and analytical mindset
  • computer literate for recipe and production tracking
  • problem-solving capability
  • ability to maintain composure and efficiency in a fast-paced environment
  • knowledge of nutrition and recipe development is a plus.

Job Duties

  • Oversee product quality and food safety in a mass production kitchen
  • ensure the execution of new recipes and training of kitchen staff
  • own weekly yields for accurate cost of goods targets
  • train, coach, and develop sous chef staff with weekly one-on-one meetings
  • develop and implement process controls
  • validate consistent premium taste, appearance and performance of meals
  • train and lead team members in all production areas including pre-op, cooking, assembly, and cooling
  • implement and adhere to gold standards of food quality and safety
  • cover cooking stations in absence of sous chef
  • lead culinary academy to teach techniques and best practices
  • leverage knowledge of HACCP, FSMA, SQF, and USDA regulations
  • continuously improve product quality with Corporate Executive chef and R&D support
  • address product quality issues and customer complaints
  • supervise food production personnel and assist as needed
  • ensure cost standards and productivity targets are met
  • control food and payroll costs
  • prepare weekly cook schedules and approve payroll
  • supervise and train employees on sanitation and safety
  • develop training and professional development opportunities
  • maintain kitchen security including equipment and inventory
  • assume charge in absence of Executive Sous Chef
  • oversee all food preparation aspects
  • work in any assigned station
  • maintain quality, cost, eye appeal and flavor standards
  • submit requests for kitchen maintenance and repairs
  • coordinate and communicate timing adjustments
  • inspect food presentation to ensure quality.
