Job Requirements
- BS degree in Culinary Arts or related field
- Minimum 5 years experience managing large-scale food production or catering operations
- Knowledge of USDA/FDA food safety regulations
- Understanding of Paleo, Ketogenic, low/slow carb, and Mind diets
- Ability to plan, organize, and prioritize multiple projects
- Experience with Lean Six Sigma or similar process improvement methodologies preferred
- Strong leadership and communication skills
- Passion for nutrition and helping people achieve wellness goals
Job Qualifications
- BS degree in Culinary Arts or similar qualifications
- 5+ years experience running a commissary or large restaurant/banquet/catering
- Familiarity with USDA and FDA guidelines
- Strong understanding of the Paleo, Ketogenic, low/slow carb, and Mind diets
- Skilled at planning, organizing, prioritizing, and executing projects
- Experience with Lean Six Sigma is a plus

Job Duties
- Oversee product quality and food safety in a mass production kitchen
- Ensure the execution of new recipes, training, and oversight of kitchen staff to implement new and improve existing recipes
- Develop and implement process controls in a kitchen environment
- Validate consistent, premium taste, appearance, and performance of every meal leaving the kitchen
- Train and lead team members throughout all production stages including pre-operation, cooking, assembly, cooling
- Implement and adhere to gold standards of food quality and safety
- Leverage knowledge of HACCP, FSMA, SQF, and USDA regulations
- Continuously improve product quality and processes with support from Corporate Executive and R&D chefs
- Address and resolve product quality issues and customer complaints related to meal production
- Supervise food production personnel, assist with production tasks, ensure consistent attainment of quality and cost standards
- Manage staffing for maximum productivity, control food and payroll costs
- Prepare cook schedules and review payroll with HR
- Supervise, evaluate, and train employees on sanitation, safety, menu planning, and production activities
- Develop training programs and professional development opportunities
- Maintain kitchen security including equipment, food, and supply inventories
- Assume complete charge of the kitchen in Executive Chef’s absence
- Oversee all aspects of food preparation
- Work in any kitchen station as assigned
- Maintain quality, cost, presentation, and flavor standards
- Submit requests for maintenance and upkeep of kitchen and equipment
- Review, coordinate, and communicate timing adjustments before production
- Inspect presentation and quality of food items before production time
