Job Requirements
- High school diploma or GED or equivalent working knowledge
- two or more years of similar work experience in production cooking
- solid understanding of cooking principles and menu substitutions for special diets
- skills in hot food production and use of commercial kitchen equipment
- ability to learn and follow established policies and procedures
- ability to read and understand written and verbal instructions
- effective communication skills
- math calculation abilities for recipe weights and food amounts
- ability to learn food handling regulations and pass certification tests
- ability to perform tasks within limited time frames and follow cleaning and production schedules
- safe use of cleaning chemicals
- food handlers card required within 30 days of hire for Banner Staffing Services team members
- Arizona Fingerprint Clearance Card required for employees working at Banner Behavioral Health Hospital
Job Qualifications
- High school diploma or GED or equivalent working knowledge
- two or more years of experience in production cooking or institutional food service
- solid understanding of cooking principles and menu substitutions including special diet modifications
- demonstrated ability to use commercial kitchen equipment
- effective communication skills
- ability to read and understand written and verbal instructions
- basic math skills for recipe calculations
- knowledge of food handling regulations
- ability to perform tasks within limited time frames
- ability to follow production and cleaning schedules
Job Duties
- Prepares all food items according to standardized recipes
- adjusts recipe quantities for correct yields
- notifies supervisor of any problems relating to production
- plans food production timing and quantities according to daily orders and production assignments
- determines menu substitutions for shortages and consults diet-tech or dietician for special diets
- minimizes food waste through effective planning and tracking
- records food shortages and excess quantities
- checks and logs food and equipment temperatures
- reports any equipment problems to supervisor
- maintains par levels of food and supplies and rotates food stocks
- keeps work areas clean and orderly
- reports needed equipment repairs
- receives and checks deliveries from vendors
- oversees production quality when needed
- provides leadership and knowledge in cooking and food preparation skills to other kitchen staff
- may interact with external customers in cafeteria or catering assignments
