The role of the Retail Baker at Gateaux Bakery is integral to sustaining the bakery’s reputation for excellence. This position involves the baking and preparation of a diverse variety of products, including cakes, breads, quiches, breakfast pastries, cookies, petit fours, creams, curds, mousses, icings, and laminated doughs. The Retail Baker is responsible for preparing these items not only for the retail storefront but also for seasonal contract assignments, which require flexibility and the ability to meet specialized client requests.

This full-time position offers a competitive hourly wage, ranging between $20 and $25, with the maximum rate reserved for candidates who meet all the outlined qualifications and requirements. The work schedule is Monday through Friday, from 6:00 am to 2:30 pm, with weekends off, providing a balanced work-life arrangement.

Key responsibilities for the Retail Baker include meticulous mise en place and preparatory work such as weighing, measuring, and mixing ingredients with commercial-grade equipment and machinery. Candidates must demonstrate proficiency with commercial convection ovens and dough sheeters, ensuring precise baking through monitoring oven temperatures and bake times. Production duties involve baking an array of bakery items to the highest standards, with occasional development of desserts for special seasonal requests.

Maintaining a clean, safe, and hygienic workspace in accordance with local health regulations is paramount. The Retail Baker will also track ingredient inventory weekly and assist with ordering and receiving supplies to ensure smooth production flows. Successful candidates will have 2 to 5 years of experience in a commercial baking kitchen, with preference given to those holding a Baking and Pastry Arts diploma, although this is not mandatory.

Physical demands of the role include standing for extended periods and lifting weights up to 50 pounds. Candidates must possess a sophisticated understanding of baking and mixing methods, with accurate scaling and calibration skills for various recipes. ServSafe certification is required to align with food safety best practices.
