Job Requirements

  • Some college required in related field
  • Bachelors degree preferred
  • At least 2 years of beverage experience in a related field preferably in 4 or 5 star hotels or restaurants
  • Successful salesperson in fast pace service environments
  • Understanding of food and beverage, restaurant, bar/lounge department procedures
  • Knowledge of basic sanitation requirements and food handling safety standards
  • Effective decision making skills
  • Effective problem-solving skills
  • Flexible and able to work long hours
  • Ability to stand during an entire shift
  • Lifting up to 50 pounds occasionally and/or 20 pounds frequently
  • Must be able to stand for long periods of time
  • Certifications as required to comply with local, state and health codes such as food safety and alcohol awareness
  • Knowledge of Latin and Asian cuisine a plus

Job Duties

  • Perform all duties of restaurant employees and related departments as necessary
  • Supervise daily shift operations and ensure compliance with all restaurant policies, standards and procedures
  • Open and close restaurant shifts and ensure completion of assigned shift checklist and other duties
  • Meet and greet guests and set an exemplary example of guest service
  • Handle all guest complaints and ensure the guest is content with the overall samba experience
  • Assist servers and hosts on the floor with guests during meal periods and high demand times
  • Program daily menu specials and changes in the point of sale system
  • Assist with developing menus and promotions
  • Run and interpret department reports as necessary
  • Supervise restaurant and all related areas in the absence of the General Manager
  • Ensure staff understands local, state and federal liquor laws
  • Monitor alcohol beverage service in compliance with local laws
  • Assist with the handling and service of all bookings of restaurant parties
  • Conduct pre-meal briefings with the Chef and General Manager to educate restaurant staff on menu items including ingredients, preparation methods and unique tastes
  • Communicate areas in need of attention to staff and follow up to ensure attention to detail
  • Operate all department equipment as necessary and report malfunctions
  • Purchase appropriate supplies and manage inventories according to budget
  • Supervise staffing levels to ensure guest service, operational needs and financial objectives are met
  • Ensure employees follow cleaning schedules and keep work areas clean and sanitary
  • Maintain food handling and sanitation standards
  • Ensure all employees have proper supplies, equipment and uniforms
  • Help train employees in safety procedures and supervise execution of emergency procedures
  • Participate in investigation of employees and guest accidents
  • Understand and comply with loss prevention policies and procedures
  • Communicate performance expectations and monitor progress
  • Participate in the employee performance appraisal process
  • Coach and counsel employees on performance and handle disciplinary procedures
  • Handle employee questions and concerns
  • Participate in department meetings and communicate departmental goals
  • Participate in weekly sales strategy forecast meetings
  • Monitor actual and projected sales daily
  • Review meal period covers ratios and average check to ensure revenue goals are met or exceeded
  • Comprehend budgets, operating statements and payroll progress reports
  • Schedule effectively to meet business demands and track employee time and attendance
  • Manage payroll administration
  • Participate in management of department's controllable expenses to meet or exceed budgeted goals
  • Perform miscellaneous job-related duties as assigned
  • Perform any other duties as assigned by the company to operate the business efficiently
