The Executive Sous Chef position at White Lodging is a senior leadership role within the hotel culinary operations, designed for accomplished culinary professionals seeking to advance into an Executive Chef role. The ideal candidate will have extensive experience managing back-of-house operations in a high-volume hotel kitchen or banquet setting, including staffing, scheduling, inventory management, and portion control. Additionally, the Executive Sous Chef manages food-related financials such as vendor invoices, payroll, and inventory reconciliation, consistently ensuring budget adherence and profitability. Job Requirements
- Minimum five years of progressive chef experience in large-scale hotel or banquet culinary operation, Proven ability to lead and develop culinary teams in high-volume environments, Deep expertise in menu creation and recipe development, Strong organizational and analytical skills for managing budgets, Excellent interpersonal and communication skills, Commitment to fostering a collaborative kitchen culture, Associate's degree or equivalent hands-on leadership experience considered
Job Qualifications
- Minimum five years of progressive chef experience in large-scale hotel or banquet operations, Proven leadership and team development skills in a high-volume kitchen, Expertise in menu creation, food preparation, and recipe development, Knowledge of food safety and sanitation standards, Strong analytical skills in managing food cost and budgets, Excellent communication and culinary coaching abilities, Associate's degree in Culinary Arts, Culinary Management, or Business Administration preferred
Job Duties
- Lead all hotel culinary operations in the Executive Chef's absence, Collaborate with the Executive Chef on menu development and implementation, Manage daily back-of-house kitchen operations including staffing and inventory, Train and mentor culinary associates at various levels, Monitor and manage food-related expenses to ensure budget adherence, Partner with sales and events teams to support banquet operations and special events, Maintain compliance with health and safety regulations across all food outlets
