Job Description

Hissho Sushi is the second-largest sushi franchise in the country, proudly operating in over 2,600 locations across more than 80 retail partners, including grocery stores, universities, hospitals, airports, and more. Established with a franchise-first model, the company is built on a strong foundation of operational excellence, innovation, and robust retail relationships. Hissho Sushi has a celebrated reputation for delivering high-quality, fresh sushi products to a wide and diverse customer base while maintaining exceptional standards in food safety and customer service. The company’s extensive network and dedication to supporting franchisees are testaments to its commitment to growth and excellence within the sushi and food service industry.

The Regional Coordinator role at Hissho Sushi is a critical position responsible for supporting store openings and closings, managing sushi bar operations, and ensuring quality and safety compliance across multiple locations. This role involves hands-on tasks such as covering the sushi bar and training sushi chefs while reinforcing company policies, operational standards, and the overall company culture. Reporting directly to the Operations Manager, the Regional Coordinator plays a vital part in maintaining the consistency and quality that have become synonymous with Hissho Sushi's brand. The role demands a blend of leadership, operational expertise, and strong communication skills to interact effectively with franchisees, team members, and retail partners.

Essential functions include assisting with store openings and closings to ensure smooth operational transitions, maintaining the high standards for sushi preparation and presentation, and training chefs to meet company specifications. This includes enforcing food safety guidelines and complying with local sanitation, health codes, and weights and measures regulations. The Regional Coordinator also supports the recruitment efforts of sushi chefs and may visit various units to inspect operations and ensure adherence to policies. Additionally, the role includes responsibilities such as maintaining required logbooks, including rice pH logs and temperature logs, promoting proper display and arrangement of sushi products for optimal visual appeal, and educating customers on product offerings.

This position also focuses on improving sales, quality, and customer service, working collaboratively with the team to control costs and maintain consistency. Building and nurturing strong relationships with retail and food service partners is essential to ensuring Hissho Sushi remains the preferred supplier of choice across all locations. The Regional Coordinator must be flexible, able to travel extensively (75%-90%) and face challenges head-on with a proactive approach. This role is ideal for someone who is passionate about sushi and food service, enjoys training and mentoring others, and is committed to upholding the highest standards in food safety and customer satisfaction.
