Trade Center Management Associates (TCMA), a Drew Company, is the exclusive management company overseeing the Ronald Reagan Building and International Trade Center. TCMA brings expert management and operational excellence to this esteemed facility, ensuring that it maintains the highest standards of service and quality for its diverse array of tenants and visitors. TCMA is currently seeking a skilled and motivated Prep Cook to join its culinary team, which caters to a high-profile and fast-paced environment where high standards of food quality and safety are paramount.
The Prep Cook role at TCMA is a key position responsible for preparing a variety of hot, cold, and pastry or baking items. Under the direction of kitchen management, this position requires precision and attention to detail to ensure that all food served meets the highest quality standards. The Prep Cook will play a critical role in organizing and maintaining the work area, ensuring that all necessary supplies and equipment are ready and properly utilized. This includes inspecting, rotating, and properly storing food products to maintain freshness and quality. The Prep Cook also adheres strictly to portion control and plating guidelines, contributing to efficient kitchen operations and minimizing waste.
The role demands a thorough understanding of food safety and sanitation requirements, especially given that all operations must comply with stringent government food sanitation standards. The Prep Cook is also responsible for monitoring refrigeration and holding temperatures, and maintaining cleanliness and sanitation throughout the work environment. Competency in using kitchen equipment safely and effectively is essential, including knives, slicers, mixers, choppers, and grinders. This role requires physical endurance, with the ability to stand, stoop, bend, lift, and carry items weighing up to 50 pounds, and demands flexibility with work schedules, including nights, weekends, and holidays.

Job Requirements
- 1 - 2 years hands on experience with quality food production in high volume, upscale, hotel/free standing restaurant with banquet operation
- thorough knowledge and understanding of food service sanitation standards
- thorough knowledge and understanding of standard kitchen equipment and its use
- ability to stand, stoop, bend lift and carry up to 50 pounds
- ability to work flexible schedule including weekends and holidays
Job Qualifications
- 1 - 2 years hands on experience with quality food production in high volume, upscale, hotel/free standing restaurant with banquet operation

Job Duties
- prepares hot and cold food items
- sets up and organizes work area with all necessary supplies and equipment
- receives, inspects, rotates all food products to ensure that only fresh, high quality ingredients are used
- prepares and stores raw food products prior to final assembly of hot and cold food items
- adheres to established plating/presentation guidelines for hot and cold food
- adheres to portion control guidelines, minimizes waste
- monitors finished product waiting for server pick up to ensure food is served promptly, notifies supervisor of any delays in service
