The Prep Cook/Porter position at Carmines and Virgil's Real BBQ offers an exciting opportunity for culinary enthusiasts to join a vibrant, high-energy kitchen team committed to excellence. As a Prep Cook, you will be an essential part of a scratch kitchen team, focused on preparing fresh ingredients that ensure every Southern Italian meal is crafted to perfection. Your responsibilities will include precise measurement, cutting, peeling, and slicing of ingredients according to detailed recipe specifications, maintaining a clean and sanitized prep area, and assisting with inventory management of side dish components. Emphasis is placed on adherence to health, safety, and sanitation regulations to guarantee a safe and compliant kitchen environment.

Job Duties

  • Prepare ingredients for assigned stations, including measuring, cutting, peeling, and slicing, according to recipe specifications
  • maintain a clean and sanitized prep area before, during, and after use, ensuring all tools and equipment are properly cleaned and stored
  • monitor inventory levels of side dish ingredients and communicate needs to the Sous Chef throughout the shift
  • follow all health, safety, and sanitation guidelines as outlined by management and in compliance with city, state, and federal regulations
  • support the entire kitchen team, assisting with tasks across prep, dishwashing, and the line as needed to ensure smooth operations
  • other duties as assigned by Manager
