Job Requirements

  • Minimum 1+ years of relevant butchery experience

  • Familiarity with inventory management and ordering processes

  • Strong communication skills
  • Ability to work full-time in a fast-paced kitchen environment

Job Qualifications

  • Minimum 1+ years of butchery experience, ideally in fine dining or whole-animal operations
  • Deep understanding of meat, poultry, and seafood cuts
  • Skilled with a variety of knives, saws, and butchering equipment
  • Committed to excellence, efficiency, and cleanliness
  • Team-oriented with clear communication and a strong work ethic
  • Passionate about ingredient integrity and classical culinary technique

Job Duties

  • Execute expert butchery of whole animals, fish, and primal cuts to meet precise menu needs
  • Uphold rigorous safety, cleanliness, and HACCP standards at all times
  • Assist with inventory management, ordering, and sourcing guidance
  • Ensure consistency in portioning and yields, minimizing waste
  • Support daily prep and special tasting menus with accuracy and finesse
