The role of Prep Cook at Makers & Finders is integral to the seamless operation of the kitchen and overall back-of-house (BOH) departments. The position involves assisting across various kitchen duties including dish prep, receiving deliveries, and supporting the kitchen line. As a prep cook, you will report directly to the Lead Kitchen Assistant, Sous Chef, and General Manager, ensuring clear communication and adherence to kitchen operations. This role demands a broad understanding of each kitchen station, requiring ownership and responsibility in executing tasks efficiently and with accuracy.

The Prep Cook must maintain strict compliance with Southern Nevada Health District (SNHD) health code standards, ensuring that all documentation is kept current. You will be responsible for executing recipes precisely according to the specifications outlined in the company's recipe book, practicing the FIFO (First In, First Out) method for all kitchen inventory to maintain freshness and safety. This position requires regular use of the Jolt task and time management system to manage daily operations such as opening and closing duties, labeling food products, and tool maintenance.

Safety and food quality are paramount in this role. You must cook meats to desired temperatures using thermometers to verify doneness and prevent foodborne illnesses, ensuring customer satisfaction. Preparing the kitchen for daily service by stocking and verifying pars of ingredients is a critical part of the role to prevent dish delays or unavailable menu items. Additionally, you will keep daily temperature logs for kitchen equipment to ensure optimal functioning and safety.

Cleanliness and organizational skills are essential. The prep cook is responsible for maintaining a spotless work environment by sanitizing surfaces, sweeping, mopping, and scrubbing kitchen floors and equipment. Keeping the work area free of unnecessary items helps prevent workplace accidents and distractions, fostering a safe and productive atmosphere. The position also involves knife skills proficiency for the safe and precise cutting of produce and protein.

In addition to kitchen duties, the Prep Cook assists with inventory management, including checking, receiving, and placing orders with vendors. You will verify deliveries and correctly store items in designated areas to maintain inventory control. Attendance at all mandatory employee meetings is expected to stay informed about company updates and standards.

This role requires effective time management to complete assigned tasks within the shift while adapting to a rotating schedule that includes evenings, weekends, holidays, and typically a 5-day work week. The physical demands of the role include standing for extended periods, lifting moderate weights, and performing movements such as stooping, crouching, pulling, and pushing to carry out all tasks efficiently.

Job Duties

  • maintaining all SNHD health code standards including keeping all documentation up to date
  • upholding all Makers & Finders company policies and procedures
  • performing recipe execution to written specification as shown in recipe book
  • following FIFO (First in first out) for all products in-house
  • utilizing Jolt task and time management program for daily operations including opening and closing duties and verification as well as labeling for all food products, hot kept items, and tools
  • cooking all raw meats to desired temp and using thermometer to verify doneness to prevent customer dissatisfaction and food borne illness
  • ensuring product is readily available for daily use on each service, verifying pars set by management are fully stocked to prevent items not being available for dish completion
  • completing daily temperature logs for all equipment
  • keeping work area clean by sanitizing, sweeping, mopping, and scrubbing any and all kitchen floors and equipment
  • clearing all items not necessary for shift completion to prevent workplace accidents or distractions
  • performing additional tasks as assigned by both FOH and BOH management
  • practicing and utilizing all knife skills to ensure safe and measured cuts on both produce and protein
  • assisting with inventory checking, receiving and placing orders with vendors
  • checking in and verifying all items from daily deliveries and stocking in designated storage areas
  • attending any and all mandatory employee meetings
  • performing shift with mindful time-management to complete all tasks assigned within shift
  • reporting any violations of Makers & Finders food and sanitization procedures to upper management
