The Prep Cook role at Creative Dining Services plays a critical part within the Dining Services Department, primarily responsible for preparing high-quality, properly seasoned, and nutritious food items in a safe and timely manner. This position not only supports the food preparation process but also helps maintain stringent food safety and sanitation standards. Key responsibilities for this role include preparing food in accordance with established recipes and menus, ensuring freshness and quality are preserved at all stages. The Prep Cook monitors food temperatures for safety, maintains production and temperature logs, and adheres to proper food storage practices such as correct labeling and dating. Another fundamental aspect involves maintaining a clean, sanitized, safe, and well-organized work environment, which includes promptly cleaning spills, wearing protective gear, and proper storage of kitchen wares.

Communication skills are vital as the Prep Cook must effectively relay food production and kitchen operation concerns to supervisors and promptly report any discrepancies with kitchen equipment. The position also entails supporting fellow kitchen staff, assisting with inventory and ordering procedures, managing refuse removal, and pulling or putting away stock as needed. Success in this role requires a proactive approach, attention to detail, and a commitment to maintaining the highest standards of food service and safety.

This position requires a minimum of one year of food service experience and a ServSafe Certification to comply with food safety regulations. Job Duties

  • Prepare food such that all food is ready for use within the established timeframe
  • Prepares food items according to established recipes and menus in a manner in which preserves food freshness, quality and appeal
  • Utilizes safe food handling techniques at all times
  • Stores food items according to established standards of practice
  • Utilize proper labeling and dating
  • Holds prepared food items at appropriate temperatures below 40 degrees if cold, above 135 degrees if hot
  • Maintains production records such as food usage, overages, shortages, customer counts
  • Maintains established logs like food temperatures, cooling temperatures, cooler and freezer temperatures
  • Maintains a clean and sanitized work area
  • Maintains a safe, tidy and well organized work environment at all times
  • Cleans up spills quickly, wears protective gear as needed such as slicer glove
  • Stores wares safely
  • Communicates needs and concerns regarding food production and kitchen operation to supervisor appropriately and in a timely manner
  • Monitors kitchen equipment for proper functioning
  • Reports discrepancies to supervisor immediately
  • Supports other kitchen employees in assuring that the essential functions of the kitchen are performed adequately and appropriately
  • Assists in ordering and inventory procedures
  • Removes refuse as needed
  • Puts away or pulls stock as needed
