In addition to general food preparation duties, this role specializes in tortilla preparation, which involves masa production, pressing corn tortillas using traditional equipment, working with flour tortilla dough, and cooking tortillas to the correct specifications using specialized kitchen tools. The position requires physical stamina, including the ability to lift at least 40 pounds and the skill to safely handle kitchen equipment such as fryers, char grills, flat tops, immersion blenders, and more.

Job Requirements
- Must meet state and local requirements for Food Handler’s certification
- Certification(s) must be obtained by first day or within timeline required
- Ability to lift minimum of 40 lbs
- Basic knife safety skills
- Basic communication and reading skills
- Ability to multi-task
- Must be 18 years of age
Job Qualifications
- High school diploma or equivalent preferred
- Experience in a kitchen environment is a plus
- Familiarity with kitchen equipment including fryer, char grill, flat top, stove, immersion blender, dicers, mandolin, and scales
- Basic knife handling skills
- Basic communication and reading skills
- Ability to multitask
- Must meet state and local food handler certification requirements
- Must be at least 18 years old
Job Duties
- Produce food items listed on the prep sheet according to standards
- Maintain a clean and organized kitchen and equipment
- Set up and break down station properly
- Follow recipes accurately using the Taco Bible
- Practice food safety and HACCP techniques including FIFO
- Record food weights, track yields, label and date pans correctly
- Rotate products and assist with other duties as requested
- Produce masa and press corn tortillas
- Slack flour tortilla dough balls and book tortillas
- Cook tortillas using a flat top to specifications
