The Prep Cook position at Ojos Locos is an essential role within the kitchen team, responsible for supporting chefs and ensuring food preparation runs smoothly and efficiently. This role involves a variety of tasks including washing and chopping vegetables, cutting meat, measuring and preparing ingredients according to specific recipes, and handling basic cooking duties such as reducing sauces and parboiling. The Prep Cook also contributes to maintaining a clean and organized kitchen environment by washing dishes, sanitizing surfaces, and properly storing ingredients. Additionally, the role requires vigilance in monitoring ingredient stocks and kitchen tools to ensure everything is properly maintained and available for daily operations.
This position requires attention to detail, a commitment to food safety, and the ability to work in a fast-paced, sometimes noisy environment. Candidates should expect to work flexible hours, including late shifts, weekends, and holidays, aligning with the operational needs of the restaurant. The Prep Cook must be physically capable of standing for long periods, lifting up to 50 pounds, and performing various physical movements such as bending, kneeling, and reaching. Job Requirements
- must be at least 18 or older
- food handler certificate required
- ability to work a flexible schedule including late shifts, weekends or holidays
- physical ability to stand for 10-12 hours per day
- able to lift and/or move up to 50 pounds
- ability to bend, kneel, crouch, or crawl as needed
- close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus
- good communication skills in English and Spanish
Job Qualifications
- high school diploma preferred
- ability to effectively communicate in English and Spanish
- food handler certificate
- previous experience in food preparation or kitchen work is an advantage
Job Duties
- measures ingredients and prepares them in accordance to Ojos Locos recipe guides
- washes and peels ingredients in order for them to be used in different meals
- cuts and portions different types of meat according to specifications
- keeps track of ingredient quantities and ensures there are always enough for the day/week
- stores ingredients in dedicated containers, making sure that they are best preserved
- informs superiors when the ingredients stock is getting low or when the kitchen tools do not work properly
- cleans and sanitizes the working surfaces, tools, utensils and working area
- carefully supervises the food temperature and the temperature from cooling rooms, to ensure that the ingredients kept are kept at the appropriate temperature
