The role of Prep Cook 1 (Dishes and Veggie Prep) is an essential entry-level position within Canton Rodeo’s kitchen team. Reporting directly to the Assistant Manager or General Manager, the Prep Cook 1 will be part of the Back of House team responsible for preparing vegetables, managing dish operations, and ensuring that the kitchen is fully prepared and organized for smooth service. This role is vital in maintaining ingredient freshness, adhering to safety standards, and optimizing kitchen efficiency so that the culinary team can execute at speed without compromising quality. Sanitation and dish operations will be continuously managed to support seamless production, requiring strict adherence to chemical handling procedures and proper use of washing, rinsing, and sanitizing steps. Job Duties

  • Prepare batches efficiently maintaining quality standards
  • Minimize food waste through proper portioning and storage
  • Monitor sauce quality, freshness, and storage conditions
  • Prepare white rice and seasoned rice for the wok station
  • Complete food safety training and comply with knowledge checks
  • Record daily temperature logs for food items and equipment
  • Maintain safe work areas free of hazards
  • Follow workplace safety procedures and report hazards
  • Ensure kitchen prep and dish areas are ready for service
  • Anticipate kitchen needs and prevent service disruptions
  • Maintain adequate stock levels and communicate low inventory
  • Label, date, and rotate products using FIFO
  • Identify and report spoilage or quality concerns
  • Maintain a continuous flow of clean dishes, pans, and utensils
  • Prioritize washing critical equipment
  • Wash, sanitize, and organize kitchen items timely
  • Clean and maintain the dishwashing station
  • Follow proper wash, rinse, sanitize procedures
  • Transport soiled service wares promptly
  • Complete Knife Safety Certification and use cut-resistant equipment
  • Perform daily knife maintenance and sharpening
  • Cut vegetables with precision and speed
  • Assist with protein carving and cutting as trained
