The role at Colonial Downs Group is for an advanced cook responsible for food preparation and supporting kitchen leadership functions. This position demands a strong culinary skill set, paired with leadership and mentorship capabilities to train and guide back-of-house (BOH) team members effectively. The advanced cook will ensure all food preparation aligns with local, state, and departmental standards, emphasizing quality, safety, and continuous improvement. Working at a rate of $23 per hour, this role is pivotal in maintaining the kitchen’s high standards and smooth operation. Key responsibilities include assisting in the training and development of kitchen staff, managing day-to-day BOH activities, preparing complex hot and cold dishes, and upholding strict sanitation and safety regulations. Job Requirements
- High school diploma or GED
- Three to five years of related culinary experience
- Prior experience in lead trainer or mentorship capacity preferred
- Must obtain and maintain ServSafe certification
- Must obtain and maintain a valid racing license
- Must have a current driver’s license with minimum three years driving history
- Ability to stand for the duration of shift
- Ability to lift up to 50 pounds
- Willingness to work long hours including nights weekends and holidays
Job Qualifications

- Strong interpersonal and communication skills
- Proficiency in Microsoft Office

- Must have a current driver’s license with minimum three years driving history
Job Duties
- Assist with coaching training and ongoing development of BOH team members serving as a role model for culinary standards and professionalism
- Provide day-to-day leadership support by guiding and directing BOH team during food preparation and service
- Help onboard new team members and reinforce proper techniques safety procedures and company standards
- Forecast oversee and coordinate work performed by BOH team in planning and preparation of menu items and maintaining a sanitary work environment
- Provide complex hot and cold food preparation according to recipes and guidelines
- Maintain knowledge of kitchen equipment operations including breakdown cleaning and maintenance
- Ensure all food preparation is done in accordance with procedures and recipes
