This role is based at Mandalay Bay, part of MGM Resorts' expansive network, specifically within its Conventions & Banquets culinary team. The position available is for a Pastry Sous Chef, a vital role tasked with crafting delectable desserts and baked goods that consistently amaze guests. As the Pastry Sous Chef, you will serve as the right hand to the Executive Pastry Chef, stepping in during their absence to manage daily bakery operations and guide the bakery team. This leadership role requires a blend of creativity, technical skill, and supervisory abilities to ensure every pastry is executed with precision and artistic flair. The Pastry Sous Chef will be responsible for overseeing the preparation of bakery items, ensuring they meet both qualitative and aesthetic standards. Monitoring business flow and adjusting employee schedules in collaboration with the Executive Pastry Chef will be a key part of maintaining operational efficiency. The role also encompasses customer service elements, addressing complaints and feedback promptly to uphold brand reputation and guest satisfaction. Additionally, collaboration with the Executive Pastry Chef extends to cost management strategies that reduce operating expenses without compromising quality. Job Requirements
- High school diploma or GED
- relevant experience in pastry kitchen management
- supervisory experience in organizing and scheduling bakery staff
- ability to manage high-volume banquet pastry production
- effective communication skills
- knowledge of bakery ingredient ordering processes
- creative aptitude for pastry development
- capacity to handle customer complaints professionally
Job Qualifications
- High School Diploma or GED
- Associate's Degree in Food & Beverage or course certification from an accredited Culinary institute preferred
- 2+ years of prior relevant experience in a supervisory role organizing and scheduling employees in a pastry management environment
- 5+ years of prior relevant experience in a high-volume, fine dining, banquet production kitchen in a hotel/casino environment preferred
Job Duties
- Perform duties of the Assistant Executive Pastry Chef during his/her absence
- assist the Executive Pastry Chef with day-to-day operation and supervision of bakery employees
- give constructive criticism and be consistent with all documentation
- inspect bakery items upon completion to ensure they have been prepared correctly and attractively
- monitor business flow and work with the Executive Pastry Chef in scheduling employees according to demand for bakeshop goods
- inform the Executive Pastry Chef and Assistant Executive Pastry Chef regarding customer complaints or disputes
- assist Executive Pastry Chef develop and research new recipes and create decorative cakes, statuaries and ornaments for special events, parties, and banquets
- keep the Assistant Executive Pastry Chef and the Executive Pastry Chef informed of all pertinent information and any irregularities occurring in the bake shop operation
- assist with ordering bakery ingredients from warehouse
