The Pastry Sous Chef role is critical within the culinary team of Omni PGA Frisco Resort. Partnering closely with the Executive Pastry Chef, the Pastry Sous Chef is instrumental in defining and delivering the resort's pastry identity, combining creativity, precision, and operational leadership. This position demands a leader who can inspire and manage a talented team while upholding high standards of quality and craftsmanship. The Pastry Sous Chef is responsible for overseeing the production of desserts, amenities, and specialty pastry items across multiple outlets of the resort including signature restaurants, in-room dining, golf events, banquets, and VIP experiences.

This role requires a unique blend of culinary artistry and management expertise, ensuring that pastry production runs smoothly, efficiently, and in line with Omni's distinct brand of luxury. The Pastry Sous Chef must maintain meticulous attention to detail, ensure compliance with food safety regulations, and execute desserts with consistency and elevated presentation. They play a key part in innovating seasonal menus and creating signature dessert offerings that reinforce the resort’s refined Texas luxury aesthetic.

Job Requirements

  • Minimum 6 years' experience in a 5-star hotel or luxury fine-dining environment
  • Diploma from an accredited culinary pastry school
  • Certified Food Protection Manager Certification
  • Flexibility to work early mornings, evenings, weekends, holidays, and event-driven schedules
  • Ability to lift up to 50 lbs, push/pull up to 75 lbs, and stand for extended periods
  • Strong understanding of modern dietary needs and allergen-safe recipe development
  • Ability to stand for extended periods and lift/push/pull required weights
  • Comfortable working in hot, cold, and fast-paced kitchen environments

Job Qualifications

  • Minimum 6 years' experience in a 5-star hotel or luxury fine-dining environment
  • Strong foundation in advanced pastry techniques, high-volume production, and refined dessert execution
  • Diploma from an accredited culinary pastry school
  • Certified Food Protection Manager Certification
  • Exceptional organizational skills with the ability to thrive under pressure while maintaining impeccable attention to detail
  • Flexibility to work early mornings, evenings, weekends, holidays, and event-driven schedules
  • Strong understanding of modern dietary needs and allergen-safe recipe development
  • Ability to lift up to 50 lbs, push/pull up to 75 lbs, and stand for extended periods
  • 1-2 years of leadership experience in a luxury hotel or resort environment
  • Experience supporting large-scale banquet operations and high-profile events

Job Duties

  • Lead daily pastry production with an unwavering commitment to quality, consistency, and elevated presentation across all resort outlets
  • Execute refined desserts for banquets, large-scale golf tournaments, signature restaurants, IRD, poolside service, and bespoke VIP amenities
  • Maintain a seamless production environment through meticulous prep planning, station organization, and timely execution aligned with BEOs and event timelines
  • Steward food cost management through thoughtful ordering, waste reduction, and disciplined inventory practices
  • Uphold Omni's culinary standards by maintaining and enforcing precise recipes, techniques, and presentation guidelines
  • Ensure readiness for next-day production through proactive communication with storerooms and stewarding
  • Inspire, mentor, and elevate pastry cooks through hands-on training, constructive feedback, and a commitment to professional growth
