The Pastry Sous Chef role at Paws Up Montana is an integral position within their culinary team, particularly associated with their intimate, 24-guest fine-dining tasting menu restaurant that boasts 2 Michelin Keys, a hallmark of culinary excellence. This position is responsible for creating and executing an innovative and rotating pastry and dessert program that is tailored specifically to the unique demands of such a high-caliber establishment. The Pastry Sous Chef not only ensures the day-to-day delivery of exceptional pastry items and artisanal baked goods but also maintains flawless consistency and Michelin-caliber presentation. This role requires a deep understanding of sophisticated plating aesthetics, flavor profiling, and pastry techniques, all while upholding the resort's ultra-luxury identity and Forbes standards.

In addition to culinary expertise, the Pastry Sous Chef plays a critical role in operational and team management. Responsibilities include maintaining a highly organized and pristine pastry station compliant with local health and safety regulations, managing inventory and budgeting for specialized ingredients, and assisting in labor and food cost management to keep operations efficient. Leadership is also a key aspect of this role, as the Pastry Sous Chef provides mentorship, training, and oversight to pastry team members, fostering a harmonious and high-performing environment. Collaboration with the Social Haus culinary leadership team is essential to ensure seasonal and cohesive menus that resonate with the resort’s branding. This position also demands a calm, focused demeanor paired with attention to detail and a passion for authentic hospitality.

Job Requirements

  • Minimum of 4 years of experience in a high-end pastry field
  • preferably within a tasting-menu restaurant, Michelin-rated property, or luxury resort
  • high school diploma or culinary arts degree
  • valid Montana Food Handler’s license
  • valid driver’s license with a clean driving record
  • ability to stand, walk, bend, and work efficiently in a hot kitchen environment for extended periods during service
  • ability to work flexible hours, including weekends and holidays
  • ability to lift, carry, and maneuver heavy baking equipment and bulk inventory ingredients up to 50 lbs

Job Qualifications

  • Minimum of 4 years of experience in a high-end pastry field, preferably within a tasting-menu restaurant, Michelin-rated property, or luxury resort, alongside a high school diploma or culinary arts degree
  • valid Montana Food Handler’s license and a valid driver’s license with a clean driving record

Job Duties

  • Own, design, and execute an innovative, rotating pastry and dessert program tailored specifically for an intimate, 24-guest fine-dining tasting menu restaurant with 2 Michelin Keys
  • monitor the daily preparation of all pastry items, artisanal baked goods, and customized guest arrival amenities, ensuring flawless consistency and Michelin-caliber presentation
  • partner closely with the Social Haus culinary leadership team to create cohesive, seasonal menus that reflect the estate's ultra-luxury, adult-only identity
  • maintain an immaculate, highly organized pastry station while strictly adhering to all local health department regulations and safety standards
  • uphold Forbes travel standards by maintaining advanced knowledge of food allergens and alternative preparations to seamlessly customize tasting menus for individual guest preferences
  • manage stock pars for specialized ingredients, place accurate inventory orders, and assist in managing labor and food costs to keep operations aligned with the budget
  • provide day-to-day guidance, training, and oversight to pastry team members, fostering a harmonious and high-performing kitchen environment
  • perform additional duties as assigned by the Executive Chef / Pastry Chef
