As a Pantry 1 Cook at Alohilani Resort Waikiki Beach, the successful candidate will be responsible for preparing all cold food items according to standardized recipes for various outlets including restaurants, room service, the employee cafeteria, and banquets, ensuring the highest quality and appeal of each dish. The role demands maintaining strict hygiene, sanitation, and safety protocols in all kitchen and work areas, while effectively minimizing food waste and maximizing cost efficiency. This hourly position involves mastery of various culinary techniques such as charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking. The Pantry 1 Cook must demonstrate knowledge of ingredient quality standards, proper use of herbs and spices, and proficient food preparation skills aligned with hotel standards.

The position also entails active participation in banquet food preparation as per event orders, buffet display setup, and daily kitchen line organization, including food storage and equipment handling post-service. The role requires adherence to all health department regulations and company policies, commitment to a clean-as-you-go work ethic, and flexibility to assist in other kitchen areas as needed. Effective communication, multitasking, attention to detail, and a service-oriented approach are essential to providing an exceptional dining experience for guests and team members. This role also contributes to maintaining a safe work environment by knowing the location and operation of all fire safety equipment and practicing safe work habits consistently. Job Qualifications

  • High school diploma or equivalent
  • Culinary experience
  • Experience in a hotel or related field preferred

Job Duties

  • Prepare all cold food items based on standardized recipes for restaurants, room service, employee cafeteria and banquets
  • Maintain cleanliness and organization of all storage areas
  • Complete necessary food and station preparation prior to opening the restaurant to ensure prompt and efficient guest service
  • Prepare and display buffet food items according to hotel standards
  • Use cooking techniques including charbroiling, poaching, deep-frying, sautéing, braising, roasting and par-cooking
  • Recognize quality standards in fresh vegetables, fish, dairy and meat products
  • Use herbs and spices properly
  • Maintain clean and sanitary environment, handling food and storage safely
  • Prepare food for banquets following specifications on banquet event orders
  • Prepare and service food for employee cafeteria as directed by chef or kitchen supervisor
  • Follow hotel standard recipes and prepare specials under supervision
  • Break down buffets and kitchen line, properly storing food and equipment
  • Work banquet food stations as scheduled
  • Know location and operation of all fire extinguishing equipment
  • Practice safe work habits to avoid injury
  • Use production charts as specified by hotel standards
  • Support any kitchen position in need
