The Commissary Manager role at PROformance Open Market is essential in ensuring the smooth operation of the central kitchen, which produces all food items for their workplace markets. This position requires hands-on leadership within a fast-paced, high-volume commissary environment. The manager will oversee every aspect of food production, from quality control to food safety, ensuring that all meals and snacks meet the company’s exacting standards. This role also includes responsibility for operational efficiency, recipe development, and continuous improvement to maintain consistency and cost-effectiveness.

As a key leader, the Commissary Manager will supervise and develop kitchen staff across multiple stations including prep, cooking, assembly, packaging, cooling, and labeling. They will be tasked with implementing gold standards for food quality, portion control, presentation, and sanitation to maintain the brand’s premium reputation. Additionally, managing production schedules, inventory, food costs, and labor costs will be critical to achieving the company’s profitability targets. The manager will work directly with operations and procurement teams to forecast demand and keep adequate ingredient supplies, while ensuring compliance with ServSafe certifications and local health regulations. The position demands problem-solving skills to address any quality or customer complaint issues promptly.

Job Duties

  • Oversee all daily commissary operations including food production quality control and food safety in a high-volume kitchen environment
  • Lead the preparation of fresh grab-and-go items maintaining premium taste appearance and shelf-life performance
  • Develop implement and continuously improve recipes and production processes to enhance flavor efficiency and consistency
  • Ensure strict adherence to all food safety standards including ServSafe and local health department regulations
  • Train supervise and develop kitchen staff across all stations prep cooking assembly packaging cooling and label
  • Implement and maintain gold standards for food quality portion control presentation and sanitation
  • Manage production schedules inventory food costs and labor costs to achieve profitability target
  • Prepare weekly production schedule
  • Address and resolve any quality issues or customer complaints originating from product
  • Collaborate with operations and procurement teams to forecast demand and maintain proper inventory of ingredients and supplies
  • Oversee equipment maintenance facility cleanliness and organization of the commissary
  • Step in as needed on any production station to support the team and maintain standard
  • Drive continuous improvement in processes waste reduction and operational excellence
