The ONT Field Kitchen Cook position is a part-time role offering a compensation of $22.50 per hour and reports directly to the Executive Chef within the Food & Beverage department. Being part of the ONT Field team means also being a member of a union under a collective bargaining agreement with Unite Here Local 11. This position requires a commitment to union membership as a condition of employment. The role is pivotal in ensuring the timely, efficient, sanitary, and consistent preparation of food items. It demands working in a fast-paced, high-pressure kitchen environment while maintaining composure, organization, and teamwork. The kitchen cook must prepare various types of food, including meat, seafood, poultry, vegetables, and cold items, adhering strictly to quality standards, portion sizes, and kitchen policies.

This role demands excellent time management and the ability to respond swiftly to the dynamic demands of kitchen service. Key responsibilities include setting up food preparation stations, ensuring all supplies are ready before service begins, handling food properly with correct labeling and storage, maintaining cleanliness with proper sanitation, and following safety procedures rigorously. The cook will also be responsible for closing duties, including cleaning and organizing the kitchen and storage areas, and must be able to accommodate customers with special dietary needs, such as allergies and intolerances. The job requires a high threshold for heat and stress typically found in food service environments and the ability to follow waste control guidelines carefully.

Candidates must be at least 18 years old, possess a high school diploma or GED, and have at least one year of previous food service experience preferred. Flexibility, sense of urgency, and the ability to tackle undefined tasks with problem-solving skills are vital. The position requires working nights, weekends, and holidays when necessary. Essential certifications include ServSafe and a valid food handler’s card, which the company supports by covering training costs and compensating for the training time. This role also emphasizes excellent communication, teamwork, organizational skills, a strong customer service orientation, and a professional demeanor. Physically, the position requires the ability to stand, walk, bend, and lift items up to 25 pounds, accommodate irregular work hours, and work in potentially hazardous conditions. Job Duties

  • Set up stations and collect all necessary supplies to prepare menu for service
  • Prepare a variety of foods, meat, seafood, poultry, vegetable, and cold food items
  • Properly label and date food items for storage
  • Stock and maintain sufficient levels of food products to assure a smooth service period
  • Know and comply consistently with standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
  • Use food preparation tools in accordance with manufacturer’s instructions
  • Close the kitchen correctly and follow the closing checklist for kitchen stations
  • Maintain a prepared and sanitary work area at all times
  • Assist with the cleaning, sanitation, and organization of kitchen, walk-in coolers, and all storage areas
  • Perform additional responsibilities as requested by Executive Chef or Chef
  • Prepare dishes for customers with food allergies or intolerances
  • Make sure all storage areas are tidy and all products are stored appropriately
  • Constantly use safe and hygienic food handling practices
  • Return dirty food preparation utensils to appropriate areas
  • Keep workstation and equipment clean, organized, sanitized, and sufficiently stocked
  • Use waste control guidelines and record all waste on spoilage sheet
  • Understand and maintain proper sanitation and food safety
  • Abide by all Company policies in the Human Resources Policies and Procedures, the Business Code of Conduct
  • Other duties as assigned
