The role of Campus Dining Dietitian/Nutrition Associate Manager at Eastern Kentucky University is a vital position within Aramark's commitment to providing innovative health and wellness solutions on campus. This role acts as the subject matter expert for all nutrition-related matters, leading the launch, activation, maintenance, and continuous improvement of the university’s health and wellness platform. With a focus on enhancing the student experience, this position integrates campus programming, partnerships, education, food safety oversight, and nutrition consultations to build strong community relations and promote wellness initiatives.

The Campus Dining Dietitian coordinates and collaborates closely with various teams including culinary, marketing, leadership, and campus organizations to execute wellness programs such as tabling events, cooking demonstrations, food samplings, health fairs, and guest speaker events. These initiatives are designed to educate and engage students and faculty while supporting meal plan sales by helping students identify plans that best meet their nutritional and personal preferences. Furthermore, the role includes building lasting relationships with client groups and campus organizations to align efforts with broader campus wellness goals, ensuring a unified and strategic approach to health promotion.

This position also plays a critical role in food and safety oversight. The Campus Dining Dietitian ensures compliance with United States Food and Drug Administration menu labeling laws, managing ingredient and allergen transparency across residential dining halls, retail, catering, and convenience locations on campus. By partnering with the culinary team, the role supports menu planning and development suited for various diets, including those related to allergies, intolerances, lifestyle choices, and religious requirements, ensuring inclusivity and safety for all patrons.

Additionally, the Campus Dining Dietitian provides personalized nutrition consultations to students, faculty, staff, and employees. Using Medical Nutrition Therapy and following the Nutrition Care Process for documentation, the professional offers tailored education based on reputable organizations such as the Academy of Nutrition and Dietetics and the American Heart Association. The consultant ensures strict adherence to privacy regulations including HIPAA and FERPA throughout the consultation process. Maintaining professional credentials with the Commission on Dietetic Registration and licensure through the Kentucky State Department of Health is a requisite to this role, emphasizing continuous professional growth and compliance.

Job Requirements

  • Bachelor's or master's degree in nutrition, dietetics, or related field
  • Registered Dietitian Nutritionist credential with Commission on Dietetic Registration and Licensed Dietitian status in Kentucky
  • Must obtain ServSafe certification and AllerTrain certification within 6 weeks of hire
  • At least one year experience in K12 or higher education food service preferred
  • Proficiency with PC applications such as Word, Excel, PowerPoint, Outlook
  • Strong oral and written communication skills
  • Ability to travel up to 15%

Job Qualifications

  • Bachelor's or master's degree in nutrition, dietetics, or related field
  • Registered Dietitian Nutritionist credential with Commission on Dietetic Registration and Licensed Dietitian status in Kentucky
  • RDN-eligible candidates may be considered
  • Food safety knowledge with ServSafe certification and food allergy knowledge with AllerTrain certification (to be obtained within 6 weeks of hire)
  • Minimum one year experience in K12 or higher education food service preferred
  • Proficiency with PC applications such as Word, Excel, PowerPoint, Outlook
  • Experience with food production systems, nutrition analysis software, electronic medical recording, and social media platforms preferred
  • Strong oral and written communication skills
  • Ability to establish and maintain effective working relations with diverse individuals
  • Solid strategic, analytical, and decision-making skills
  • Self-starter, confident, self-motivated, adaptable, able to work with little supervision
  • Strong value system with integrity and good listening skills
  • Ability to travel up to 15%

Job Duties

  • Support health and wellness platforms and implement programs such as tabling events, food samplings, cooking demos, lunch and learns, health fairs, guest speaker events, and other on-campus programming
  • Work with the marketing manager to engage the student population through social media and pop-up events and assist students with choosing meal plans that meet their personal needs
  • Build relationships with clients, organization department heads, and community groups to align with campus wellness initiatives
  • Support peer-to-peer programming and student interns as needed
  • Travel up to 15% to support visiting dietitian programming as needed
  • Oversee compliance with FDA menu labeling laws related to recipe and menu board signage in residential, retail, convenience, and catering locations
  • Partner with the culinary team to support menu planning and development, including ingredient and allergen transparency
  • Lead culinary team in understanding special dietary needs including allergies, intolerances, lifestyle, and religious dietary restrictions
  • Conduct one-on-one and group nutrition consultations for students, faculty, staff, and employees
  • Apply Medical Nutrition Therapy and follow Nutrition Care Process for charting during consultations
  • Provide educational materials from accredited organizations
  • Follow HIPAA and FERPA guidelines during nutrition consultations
  • Maintain registration with the Commission on Dietetic Registration and licensure through Kentucky State Department of Health and submit status annually
