The role offered at the Stock Yards facility is that of a Meat Trimmer, a critical position responsible for preparing high-quality cuts of meat according to customer specifications while maintaining strict company standards and safety regulations. This is a first-shift position with a schedule from Monday to Friday, 6:00 am to 2:30 pm, with opportunities for overtime. The Meat Trimmer is expected to work continuously in a refrigerated environment, with temperatures ranging between 35°F to 45°F, and occasionally in freezer conditions from 10°F to -10°F, ensuring that all meat products are handled with care and meet the exact requirements as set by both the company and the customers.
Key duties include trimming fat and skin from meat, counting and stacking portions per customer orders, labeling products accurately, and maintaining cleanliness and sanitation in the cutting room. The role also requires familiarity with Good Manufacturing Practices (GMP) to uphold sanitary work conditions. Although this position does not involve supervisorial responsibilities, the Meat Trimmer interacts with staff across all levels within the company, fostering a collaborative work environment. Physical stamina is necessary as the job involves standing for long periods, lifting various weights, and performing multiple physically demanding tasks throughout the shift.
Candidates for this role should bring prior kitchen prep and basic knife skills, with a preference for those who have at least six months of experience in meat trimming or related production and manufacturing roles. Experience with laser portion machinery and other meat production equipment is considered an advantage, as is knowledge of a variety of meat products including poultry, beef, lamb, and pork. Understanding USDA grades and standards is also important to ensure product quality and compliance.

Job Requirements
- Minimum six months experience in production, manufacturing or meat trimming
- Able to work standing continually in refrigerated environment
- Able to work in freezer conditions occasionally
- Basic knife skills preferred
- Understanding of safety and sanitation standards
- Physical ability to lift medium to heavy weights frequently
- Willingness to follow good manufacturing practices
- Ability to work Monday to Friday first shift schedule
- Willingness to perform various physical activities including standing, pushing, pulling, climbing, stooping, kneeling, bending, twisting, grasping, manipulating, and manual dexterity
Job Qualifications

Job Duties
- Trim fat and skin from meat and customize portions using knives or meat production equipment
- Count and stack on tray portions per customer and company specifications
- Label portions with supplied product labels
- Set up cutting room as required
- Keep cutting room and surrounding area clean and sanitized
- Follow company good manufacturing practices to maintain sanitary conditions
- Work standing continually in refrigerated environment
- Perform other duties as assigned by manager
