Job Requirements
- Must be at least 18 years old
- At least one year of experience in food preparation or related field preferred
- Food safety certification required
- Ability to work independently with minimal supervision
- Ability to exercise discretion and tact in a correctional setting
- Maintain eligibility and security clearance in correctional facilities
- Capability to perform physical tasks including lifting, bending, and prolonged standing
- Willingness to wear uniforms and personal protective equipment
Job Qualifications
- Must be at least 18 years old
- At least one year of experience in food preparation or a related field preferred
- Supervisory experience encouraged but not required
- Experience working with inmates is a plus
- Food safety certification required
- Ability to work independently
- Strong leadership and motivational skills
- Knowledge of safety procedures and policies
- Ability to exercise discretion and tact in a correctional setting
- Eligibility to maintain security clearance
Job Duties
- Ensure that food preparation and production align with company standards
- Monitor and certify production and temperature logs
- Supervise inmates during food preparation and tray assembly
- Deliver meals promptly and efficiently
- Participate in meal preparation and serving duties
- Distribute cooking instructions and ensure correct portions
- Store food items safely and maintain organized storage areas
- Follow security protocols and ensure utensils and equipment are secured
- Create and manage schedules for chefs, inmates, and staff
- Monitor and evaluate staff performance and encourage teamwork
- Assist in inventory control and process requisition orders
- Maintain kitchen equipment logs and conduct preventive maintenance
- Follow HACCP guidelines to maintain food safety
- Keep accurate food safety and temperature records
- Apply the 5 P's approach in meal organization and preservation
