The Food & Beverage Manager position at Great Wolf Lodge plays a critical role in ensuring the successful daily operations of the lodge's Food & Beverage (F&B) outlets. These outlets include a variety of eating establishments such as restaurants, bars, quick-serve locations, and banquet facilities. The manager is responsible for overseeing all operational facets, including staff management, food safety, guest services, inventory control, and adherence to brand standards. This role requires balancing guest satisfaction with operational efficiency and profitability, all while maintaining the high standards expected by the Great Wolf brand. A significant part of the position involves leadership and team development, ensuring that all F&B team members are trained, engaged, and empowered to perform their roles effectively.

In this role, the Food & Beverage Manager will lead efforts to meet monthly key performance indicators by optimizing scheduling, training, and performance management. They actively contribute to strategic planning and operational improvements by analyzing data and implementing practices that enhance productivity and customer experience. The manager will collaborate closely with other department leaders, including culinary and purchasing, ensuring that all health and safety regulations are strictly followed. Job Requirements

  • High school diploma or equivalent experience
  • Minimum of 1 year leadership experience in food and beverage
  • Flexibility to work nights, weekends, and holidays
  • Experience managing business revenue, costs, and employee engagement
  • Ability to lead teams to meet and exceed goals
  • Strong detail orientation and time management
  • Knowledge of food safety and sanitation regulations
  • Completion of criminal background check and drug screen
  • Ability to lift up to 30 lbs
  • Ability to stand for long periods
  • Ability to bend, stretch, and twist

Job Qualifications

  • High school diploma or equivalent
  • Minimum of 1 year leadership experience in food and beverage
  • Experience driving business revenue, cost control, guest satisfaction, and employee engagement
  • Strong attention to detail and time management skills
  • Comprehensive knowledge of food and beverage preparation and service standards
  • Familiarity with hospitality software including Microsoft Office Suite, payroll systems, and POS
  • Proficient with food safety and sanitation practices
  • Effective communication and conflict resolution skills
  • Bachelor’s degree in hospitality, business, or related field preferred
  • Manager-level certification in food safety and alcohol awareness preferred
  • Prior management experience in hotel or resort industry preferred
  • Strong analytical skills to interpret business indicators
  • Experience with developing workplace safety plans
  • Training or experience with kitchen and bar equipment maintenance

Job Duties

  • Oversee daily functions of lodge restaurants, bars, quick service outlets, and banquet operations per brand guidelines
  • Ensure strategic preparation for timely, thorough, and profitable guest service
  • Assist F&B leadership in operational planning and review
  • Hire, train, schedule, coach, and counsel staff
  • Enforce food safety, sanitation, and cleanliness standards
  • Collaborate with Culinary and Purchasing Teams on inventory and cost control
  • Conduct service audits and pre-shift meetings to ensure guest satisfaction
  • Monitor equipment operation and coordinate maintenance
  • Ensure compliance with safety inspections and regulations
