The role within our Concerts Division focuses on kitchen operations at House of Blues venues, primarily responsible for food preparation and station management in a fast-paced, high-volume environment. This position demands organizing and prioritizing food preparation, adherence to standardized recipes, proper portioning, and maintenance of kitchen hygiene and safety standards. The candidate will collaborate with kitchen staff to ensure seamless flow and quality of food service, engage in opening and closing duties, and support team members to uphold House of Blues policies. Physical endurance to manage standing for extended periods and lifting heavy food bins is essential, along with a commitment to upholding sanitation and safety standards.
This role requires a valid Health Department Food Handler Certification and familiarity with kitchen equipment, kitchen and restaurant operations, and expediting food service. Applicants must exhibit attention to detail, the ability to follow standardized recipes, and maintain pace with a high-volume kitchen, ensuring food quality and presentation meet standards. The position also requires COVID-19 vaccination subject to legal exemptions. Job Duties
- Organize and prioritize preparation of food items
- prepare food according to standardized recipes
- ensure proper size and weight of food portions
- coordinate food preparation with other kitchen staff
- maintain line of sight and atmosphere control by circulating through work area throughout shift
- follow standard recipes regarding presentation of food items
- prepare plate presentation pursuant to standard recipes
- clean and maintain kitchen equipment and walk-in cooler
- ensure that kitchen area, including grill, oven, stoves, etc., remain clean and free of hazards during shift
- keep floor clean and free of food items, trash, or other obstacles
- maintain House of Blues safety and sanitation standards
- prepare kitchen equipment and set up station for shift
- ensure proper rotation of all food items, including lifting/moving of food bins weighing up to 180 lbs
- perform all opening and closing duties
