We are currently seeking a skilled and passionate Lead Sushi Chef to join our team. The Lead Sushi Chef position is a vital role responsible not only for the artful preparation of sushi but also for overseeing the sushi station to ensure it operates efficiently, cleanly, and at the highest standards daily. The ideal candidate will bring at least five years of professional sushi experience and demonstrate excellent knife skills and a comprehensive understanding of sushi fundamentals. While knowledge of every fish type, Japanese ingredient, or traditional technique is not mandatory, a commitment to learning and growth is essential.
In this role, you will be leading the sushi team, managing schedules, controlling inventory, ordering ingredients, and maintaining strict cleanliness and sanitation protocols. You will ensure that every piece of sushi meets our quality standards, oversee proper food storage, and help manage waste and inventory control. Job Duties
- Oversee and take responsibility for the overall sushi area
- Maintain consistency, quality, organization, and cleanliness of the sushi station
- Prepare sushi and related ingredients according to restaurant standards
- Create and manage sushi team schedules
- Monitor inventory and place orders for fish, ingredients, and supplies as needed
- Help control waste and maintain appropriate inventory levels
- Ensure proper food storage, labeling, rotation, and handling
- Maintain high standards for sanitation and food safety
- Guide and support other sushi team members during service
- Ensure prep is completed properly and the station is ready for service
- Maintain organization throughout the shift
- Take responsibility for properly cleaning and closing the sushi kitchen at the end of each night
- Ensure equipment, work surfaces, refrigeration areas, floors, and sushi stations are cleaned and left ready for the next shift
