The Heathman Hotel is a distinguished establishment located in Portland's cultural district, revered as a hub for artistic minds since its inception in 1927. It has cultivated a unique atmosphere that seamlessly blends cultured comfort with creative inspiration, serving as a revered haven for artists, creators, collaborators, thinkers, dreamers, and doers. Known for being a discerning retreat for the global citizen, The Heathman embodies a rare blend of historical significance and contemporary relevance that makes it a landmark destination for guests and locals alike.

Managed by Aparium Hotels, a brand established in 2011, The Heathman represents one of the many unique lifestyle hotels that Aparium curates. Aparium Hotels specializes in delivering authentic hospitality experiences that honor and highlight the distinct personality of each city they serve. This management company operates a portfolio of boutique hotels that combine the charm and intimacy of individual properties with the strategic prowess and operational efficiency typical of larger hospitality groups. Aparium Hotels prides itself on uncovering memorable moments and elevating the character of the communities where its properties reside.

The Lead Cook position at The Heathman is a critical role within the hotel’s culinary team, reporting directly to the Executive Chef and Executive Sous Chef. This non-exempt role involves significant hands-on culinary preparation, execution, and kitchen operations oversight. It is an opportunity to work within an inventive and culturally rich environment that values both the art and science of cooking.

As a Lead Cook, the successful candidate will be expected to support the kitchen’s daily functions by preparing menu items to exacting standards, maintaining high levels of consistency and cleanliness, and fostering an efficient workflow. This position demands a strong foundation in culinary techniques, particularly those relevant to the diverse and elevated food and beverage offerings of a luxury hotel. Organizational ability, clear communication, and a collaborative spirit are essential to thrive in this fast-paced, high-volume environment.

The role embodies a blend of operational and creative responsibilities, where the cook not only executes dishes but also contributes positively to the kitchen culture and overall guest experience. The Lead Cook takes pride in their culinary craft, shows an eagerness to continually learn and improve, respects ingredient quality, and approaches their work with urgency and care. This role is ideal for someone with a genuine passion for food, dedication to consistency and detail, and the ability to work well within a team of culinary professionals.

In this capacity, the Lead Cook helps uphold The Heathman and Aparium Hotels’ values centered around People, Place, and Character, ensuring every culinary offering contributes to guests’ memorable experiences. This role promises both personal and professional growth in a setting that respects tradition while embracing innovation in hospitality and cuisine.
