The Lead Baker position at Swedish Hill is an essential leadership role that entails managing all bakery production while upholding the highest standards of quality, consistency, and craftsmanship. This role is tailored for someone with extensive experience in working with naturally leavened and yeasted breads who also has strong operational capabilities and a passion for fostering a high-performing bakery team. The ideal candidate will possess a hands-on leadership style and be available to work nights and weekends regularly.
This role involves overseeing wholesale bakery production, ensuring quality control, managing production schedules, and coordinating closely with the larger MML events and catering operations to meet volume and timing needs efficiently. The Lead Baker will also be responsible for maintaining operational aspects such as cost control, inventory management, and ensuring compliance with health and safety standards within the bakery.
In addition to operational leadership, the Lead Baker will play a crucial role in mentoring and developing the bakery team, promoting a positive work culture, and facilitating training to enhance technique and production standards. Collaboration is also a core component of this role—working alongside chefs and other team members to innovate new products that resonate with the MML brand while maintaining production feasibility.

Job Requirements
- Minimum 3 years of professional bakery experience
- At least 1 years of managerial or team leadership experience
- Ability to work nights and weekends consistently
- Strong organizational skills
- Proficient in Google Sheets Google Docs and Google Drive
- Experience managing high-volume production and wholesale accounts
- Passion for quality consistency and hospitality

Job Duties
- Oversee production of all bakery products ensuring quality and consistency of naturally leavened hearth breads yeasted breads and viennoiserie
- Lead wholesale production while supporting MML events and catering needs
- Maintain strict quality control standards across all products
- Ensure proper production planning to meet volume demands
- Manage and fulfill wholesale orders using the bakery software program
- Coordinate production schedules to meet wholesale and catering deadlines
- Lead inspire and grow the bakery team
- Foster a positive accountable and professional work environment
- Train and mentor team members in proper technique and production standards
- Build and manage team schedules aligned with business needs
- Control operational costs through efficient scheduling ordering and waste management
- Maintain inventory and oversee ingredient ordering
- Ensure the bakery is clean organized and compliant with health and safety standards
- Ensure all equipment is serviced regularly and maintained in proper working order
- Collaborate with the chef team to develop new and creative products aligned with the MML brand
- Contribute ideas that enhance Swedish Hill’s offerings while maintaining production feasibility
