The Lead Baker role at San Manuel is a pivotal position within the Pastry Department, reporting directly to the Assistant Pastry Chef. This role is responsible for leading, supporting, and training the baking team to consistently produce high-quality baked goods, desserts, and pastries that meet the department's rigorous standards. The Lead Baker plays a critical role in overseeing the preparation and production processes to ensure efficiency, consistency, and adherence to safety and sanitation protocols. This is a hands-on leadership position requiring a strong knowledge of both foundational and advanced baking techniques covering a diverse range of products including breads, cakes, cookies, mousses, fine chocolates, and more.

The Lead Baker must be highly organized and able to multitask effectively in a fast-paced, high-volume bakery environment. Responsibilities include reviewing production sheets, managing inventory, ensuring proper food storage and rotation, and maintaining detailed operational records. Training and mentoring bakery personnel is a vital aspect of the role, requiring clear communication skills and the ability to delegate tasks while upholding quality and efficiency. The Lead Baker supports special projects such as large-scale catering events and dessert station management, demonstrating flexibility and teamwork. A strong commitment to food safety, sanitation, and workplace safety is essential to maintain a safe and productive environment for all team members. The position may require working evenings, weekends, and holidays and demands physical stamina and the ability to work under pressure. Candidates should have a minimum of two years of professional experience in a similar role within a full-service bakery or food service establishment. High school diploma or GED is required, and a Baking and Pastry Arts certificate or degree is preferred. Certifications such as ServSafe and a Food Handler's card are mandatory.   • Must maintain a neat and clean appearance as per policy

Job Qualifications

Job Duties

  • Oversees the preparation and production of baked goods, pastries, and cakes to ensure quality standards
  • Assists in managing daily production and output volumes
  • Ensures adherence to complex recipes and baking techniques
  • Maintains inventory and validates production sheets for accuracy
  • Trains and mentors bakery personnel and conducts daily pre-shift meetings
  • Manages food safety protocols including proper storage, labeling, and rotation of ingredients
  • Supports special catering projects and manages dessert presentation stations
  • Reports safety hazards and ensures compliance with safety protocols
  • Maintains operational records including sanitation logs and production documentation
  • Fulfills other duties assigned to support department operations
