Job Requirements
- must be able to read, write and communicate in English
- must be able to perform basic math operations including addition, subtraction, multiplication and division
- must have clear and effective communication skills
- must provide friendly and efficient service to guests and team members
- must be able to work under pressure and remain calm during busy periods
- must possess advanced skills in hands-on training of team members
- must be effectively delegate responsibilities within the baking team
- must be proficient in interpreting recipes, production schedules, diagrams and logs
- must obtain and maintain a current food handler’s card
- must possess valid ServSafe certification
- may be required to obtain and maintain a gaming license at the discretion of the San Manuel Tribal Gaming Commission
- no driving responsibilities required
Job Qualifications
- high school diploma or GED
- baking and pastry arts certificate or degree preferred
- minimum 2 years professional experience in high-volume or production baking
- proficiency in advanced baking techniques
- ability to multitask and manage time efficiently
- strong organizational skills
- effective communication skills in English
- ability to train and delegate within a team
- knowledge of food safety and sanitation standards
- proficient in interpreting recipes, production schedules, and operational logs
Job Duties
- Oversees the preparation and production of a diverse range of baked goods, pastries, and cakes to ensure consistency and adherence to quality standards
- assists in daily production and manages output volumes
- oversees recipe execution and maintains rigorous quality control throughout all baking stages
- possesses strong knowledge of fundamental and advanced baking techniques including bread, cakes, dessert pastries, cookies, mousses, and fine chocolates
- multitasks effectively with excellent organizational and time management skills
- reviews and validates production sheets to ensure accuracy and alignment with production goals
- conducts daily inventory of essential ingredients
- trains bakery personnel and conducts clear daily pre-shifts
- communicates effectively with management and team to address requests
- ensures proper food storage and rotation using FIFO methods
- upholds food safety protocols including expiration date verification and labeling
- supports pastry team in special project production including catering functions and casino events
- oversees Serrano Buffet dessert station for professional presentation and cleanliness
- reports injuries, accidents, and unsafe conditions promptly
- maintains operational records including logs, sanitation documentation, and production sheets
- performs other duties as assigned to support department efficiency
