The Lead Baker role at San Manuel is a pivotal position within the Pastry Department. Reporting directly to the Assistant Pastry Chef, the Lead Baker is tasked with leading, supporting, and training the baking team to ensure high-quality production that aligns with the department’s standards. This leadership role involves overseeing the production of a diverse range of baked goods, including bread, cakes, cookies, mousses, fine chocolates, and specialty pastries. The Lead Baker ensures consistency and quality control across daily output, adjusts workflows based on demand, and is capable of stepping into any baking station to maintain smooth operations and timely completion of tasks.

A key part of this role includes maintaining strict sanitation protocols and safe operation of bakery equipment, thereby creating a safe and efficient work environment. The Lead Baker is also responsible for training bakery personnel, conducting daily inventories, validating production sheets, and ensuring compliance with food safety standards such as proper food rotation and management of expiration dates. They have an important role in communication, actively liaising with management, other departments, and guests to address requests and concerns efficiently.

Additionally, the Lead Baker supports the pastry team in special projects and high-profile catering functions, oversees the Serrano Buffet dessert station, and maintains professionalism in product presentation and workspace organization. This role demands a strong ability to handle pressure in a fast-paced environment, excellent organizational and multitasking skills, and a keen eye for detail. Essential licenses and certifications such as a Food Handler’s card and ServSafe certification are required, along with the possibility of needing a gaming license.

Job Requirements

  • must be able to read, write and communicate in English

Job Qualifications

Job Duties

  • Oversees the preparation and production of a diverse range of baked goods, pastries, and cakes to ensure consistency and adherence to quality standards

  • possesses strong knowledge of fundamental and advanced baking techniques including bread, cakes, dessert pastries, cookies, mousses, and fine chocolates

  • reviews and validates production sheets to ensure accuracy and alignment with production goals
  • conducts daily inventory of essential ingredients
  • trains bakery personnel and conducts clear daily pre-shifts
  • communicates effectively with management and team to address requests
  • ensures proper food storage and rotation using FIFO methods
  • upholds food safety protocols including expiration date verification and labeling
  • supports pastry team in special project production including catering functions and casino events
  • oversees Serrano Buffet dessert station for professional presentation and cleanliness
  • reports injuries, accidents, and unsafe conditions promptly
  • maintains operational records including logs, sanitation documentation, and production sheets
  • performs other duties as assigned to support department efficiency
