Job Requirements

  • must be able to read, write and communicate in English
  • must be able to perform basic math operations including addition, subtraction, multiplication and division
  • must have clear and effective communication skills
  • must provide friendly and efficient service to guests and team members
  • must be able to work under pressure and remain calm during busy periods
  • must possess advanced skills in hands-on training of team members
  • must be effectively delegate responsibilities within the baking team
  • must be proficient in interpreting recipes, production schedules, diagrams and logs
  • must obtain and maintain a current food handler’s card
  • must possess valid ServSafe certification
  • may be required to obtain and maintain a gaming license at the discretion of the San Manuel Tribal Gaming Commission
  • no driving responsibilities required

Job Qualifications

  • high school diploma or GED
  • baking and pastry arts certificate or degree preferred
  • minimum 2 years professional experience in high-volume or production baking
  • proficiency in advanced baking techniques
  • ability to multitask and manage time efficiently
  • strong organizational skills
  • effective communication skills in English
  • ability to train and delegate within a team
  • knowledge of food safety and sanitation standards
  • proficient in interpreting recipes, production schedules, and operational logs

Job Duties

  • Oversees the preparation and production of a diverse range of baked goods, pastries, and cakes to ensure consistency and adherence to quality standards
  • assists in daily production and manages output volumes
  • oversees recipe execution and maintains rigorous quality control throughout all baking stages
  • possesses strong knowledge of fundamental and advanced baking techniques including bread, cakes, dessert pastries, cookies, mousses, and fine chocolates
  • multitasks effectively with excellent organizational and time management skills
  • reviews and validates production sheets to ensure accuracy and alignment with production goals
  • conducts daily inventory of essential ingredients
  • trains bakery personnel and conducts clear daily pre-shifts
  • communicates effectively with management and team to address requests
  • ensures proper food storage and rotation using FIFO methods
  • upholds food safety protocols including expiration date verification and labeling
  • supports pastry team in special project production including catering functions and casino events
  • oversees Serrano Buffet dessert station for professional presentation and cleanliness
  • reports injuries, accidents, and unsafe conditions promptly
  • maintains operational records including logs, sanitation documentation, and production sheets
  • performs other duties as assigned to support department efficiency
