The Kitchen Supervisor position at the Suwanee Work Camp – Florida Department of Corrections is a vital role within Aramark’s correctional food service operations. This role involves supervising inmates to ensure that meals and food items are prepared according to established production plans and Aramark’s high standards. The Kitchen Supervisor is responsible for training workers on proper food preparation techniques, assigning and coordinating tasks to enhance operational efficiency, and maintaining strict sanitation and safety protocols. This position requires adherence to food safety standards, including HACCP policies, proper handling, storage procedures, and ensuring that all dietary and portion control requirements are met.

In this role, the Kitchen Supervisor plays a key part in maintaining secure and well-organized kitchen operations within the correctional environment. Responsibilities include overseeing meal preparation and tray assembly, reviewing production and temperature logs to ensure compliance, and managing inventory control and requisition processes. The supervisor must ensure that all security policies are followed, including locking storage areas and securing kitchen equipment and keys. This job entails physical activities such as lifting, bending, and extended periods of walking or standing, along with the potential need to wear uniforms and personal protective equipment.

The ideal candidate will have at least one year of food preparation or related work experience, with previous supervisory experience preferred. Experience working in correctional settings with inmate populations is a plus. Ability to motivate and supervise team members to meet both quality and quantity goals is essential. The role requires obtaining and maintaining food safety certification and meeting correctional facility security clearance requirements. Candidates must demonstrate sound judgment, effective communication, and the ability to work independently with limited supervision.

Job Duties

  • Adhere to and maintain preparation and production guidelines according to Aramark standards by reviewing and approving production and temperature logs
  • supervise inmates in food preparation and tray assembly
  • ensure timely, efficient meal service and all Aramark guidelines are being met
  • participate in preparation and serving of meals
  • print and distribute recipes
  • direct inmates in the use of Aramark recipes and train on proper cooking procedures
  • ensure proper portions and any special dietary requirements are fulfilled
  • obtain accurate daily population counts and review with staff
  • adhere to security policies and procedures
  • ensure storage areas are locked at all times
  • ensure that all kitchen tools and equipment are returned to their designated secure area
  • ensure all keys are returned and secured
  • determine work procedures, prepare work schedules and sanitation schedules while ensuring that cooks, inmates and/or food service workers adhere to the assigned schedule
  • assist in conducting inventory, properly receiving, and storing food and food related items
  • requisition orders as needed for approval
  • participate in the preparation/5 P's (Participation, Pulls, Production, Portion Control, and Postproduction), storage and assembly of meals and food items
  • follow the Company's Standard of Operation for food handling and storage
  • follow HACCP policies and procedures regarding proper food handling procedures
