The Kitchen Operations Supervisor role at Marion Correctional Institution is integral to the successful operation of the facility’s kitchen and food preparation services. This supervisory position involves overseeing inmates to ensure that meals and food items are prepared according to the production schedule while meeting Aramark’s rigorous standards for food quality and safety. The supervisor is responsible for instructing staff, delegating duties, organizing tasks to improve productivity, and ensuring the kitchen environment complies with health and safety regulations. - Must be at least 18 years of age
- Minimum of 1 year of food preparation or related experience preferred
- Previous supervisory experience preferred
- Experience working with inmates is a plus

Job Duties
- Follow and uphold Aramark standards for food preparation and production
- Review and approve production and temperature records
- Supervise inmates during food preparation and tray assembly
- Ensure meals are served promptly and efficiently in accordance with Aramark standards
- Participate in food preparation and service
- Print and distribute recipes while ensuring proper portion control and accommodation of special dietary needs
- Ensure all food items are stored safely and organized in a hazard-free environment
- Adhere to security procedures and ensure storage areas remain locked at all times
- Ensure all kitchen tools, equipment, and keys are returned to designated secure locations
- Create and manage schedules for cooks, inmates, and food service workers, including sanitation routines
- Supervise and evaluate staff performance to promote teamwork, efficiency, and professional growth
- Assist with inventory management, including the proper receiving and storage of food and food-related items
- Process requisitions as needed and maintain accurate inventory records
- Maintain logs for kitchen equipment upkeep and perform preventative maintenance
- Follow HACCP guidelines to ensure safe food handling and storage
- Ensure all food safety and temperature logs are completed accurately and take corrective action when necessary
- Participate in meal preparation, storage, and assembly according to the 5 P’s (Participation, Pulls, Production, Portion Control, and Postproduction)
