The Kitchen Manager role at Alamo Drafthouse Cinema is a pivotal position designed for a passionate and experienced culinary leader who is committed to excellence in both food quality and team development. This role offers an annual compensation range of $65,000 to $75,000, plus an incentive bonus based on performance. Located at 1911 Aldrich St Ste 120 in Austin, Texas, the Kitchen Manager will be responsible for overseeing all facets of kitchen operations. This includes managing food quality, controlling inventory and food costs, optimizing labor through effective staffing and scheduling, ensuring compliance with safety and sanitation standards, and maximizing overall kitchen productivity and storage.

As a Kitchen Manager, you will be a developer of people, nurturing and coaching your team to reach their full potential. You will lead by example, embodying the company’s core values and fostering a positive, inclusive work environment. Your daily responsibilities will involve detailed monitoring of inventory, maintaining accurate pars and prep lists, and implementing best practices to minimize waste. You will actively participate in menu development and rollout of limited-time offers, ensuring the team is well-trained and prepared to deliver exceptional food experiences.

This role requires a balance of culinary expertise and strong financial discipline to achieve and exceed revenue goals while controlling costs. You will also be instrumental in creating an exceptional guest experience by maintaining high standards of food quality, recipe adherence, prompt service, cleanliness, and organization. The position demands excellent communication skills to effectively coordinate with the kitchen staff, front-of-house teams, and venue management.

Job Requirements

  • Minimum 3 years of experience in high volume theater, restaurant or entertainment venue
  • ServSafe Certification and applicable local Health Cards
  • Excellent communication skills both verbal and written
  • Ability to work minimum 45 hours per week including weekends and holidays
  • Basic proficiency in Microsoft Office and Google Suite
  • Positive and coachable attitude with strong problem-solving ability
  • Commitment to high standards of food quality and safety
  • Physical ability to stand, bend, stoop, twist, climb and lift up to 50 lbs
  • Flexible scheduling to accommodate high volume periods

Job Qualifications

  • At least 3+ years high volume theater, restaurant or entertainment venue experience
  • ServSafe Certification
  • Local Health Cards as required
  • Positive, fun, coachable, and open-minded approach
  • Excellent verbal and written communication skills
  • Maniacal focus on guest experience
  • Resourceful problem-solving skills
  • Proven record of high standards
  • Able to work minimum 45 hours weekly including weekends and holidays
  • Basic computer knowledge including Microsoft Office and G-Suite
  • Ready and excited to work in high volume environment

Job Duties

  • Monitors inventory and reports results to the General Manager
  • Develops hourly teams on appropriate utilization of the inventory system
  • Maintains, controls, and develops teams’ food cost acumen by properly ordering and receiving products
  • Utilizes PMIX to minimize waste and establish accurate pars/prep lists
  • Maintains appropriate staffing levels by tracking labor and maintaining budgeted staffing expectations
  • Interviews and hires kitchen teammates
  • Actively participates in core menu and LTO rollouts including planning and team training
  • Maintains appropriate small ware supplies and ordering practices
  • Upholds standards of behavior per company Core Values, Code of Conduct, and Operational Guidelines
  • Ensures a safe and sanitary working environment
  • Sets high food quality expectations by maintaining recipe adherence, line checks, portion controls, cleanliness, organization, food storage, and sanitation standards
  • Consistently reviews ticket times to ensure prompt food preparation and delivery
  • Conducts thorough line checks, temperature logs, and other required kitchen systems
  • Schedules kitchen teams using forecasting and labor proforma tools
  • Leads by example and coaches communication between all venue roles
  • Maintains the kitchen communications board
  • Conducts daily shift and larger kitchen team meetings
