Job Requirements

  • High school diploma or equivalent
  • 3+ years of experience as a Kitchen Manager or similar leadership role in casual dining or full service setting
  • Experience as a Line Cook preferable
  • Strong knowledge of seafood preparation
  • Excellent leadership and communication skills
  • Ability to work flexible schedule including nights and weekends
  • Ability to lift and carry up to 55 pounds
  • County or state approved food handlers certification
  • Must understand food safety regulations
  • Commitment to maintaining cleanliness and sanitation standards
  • Professional appearance and hygiene
  • Ability to communicate effectively with diverse teams
  • Must comply with health, safety, and employment regulations
  • Flexible and adaptable to changing work environment

Job Qualifications

  • 3+ years of experience as a Kitchen Manager or in a similar leadership role in casual dining or full service setting
  • Three to four years of experience as a Line Cook in a full-service restaurant of similar concept preferred
  • Strong seafood knowledge and experience working with fresh fish preferred
  • Excellent leadership and communication skills
  • Proven ability to manage costs and maximize kitchen efficiency
  • Flexible schedule required - able to work nights, weekends and long hours
  • Bilingual (English/Spanish) is a plus
  • Professional appearance and presentation required
  • County/state approved manager food handlers certificate
  • State approved alcohol awareness training program
  • State sexual harassment training
  • Must understand how to abide by the rules of the Department of Health related to food service and employee plus guest safety

Job Duties

  • Responsible for kitchen operations and food cost controls in concert with the General Manager
  • Drives accountability to ensure food cost controls, proper portioning, food inventory rotation, receiving and food storage procedures, inventory controls, purchasing procedures, kitchen security and waste controls are adhered to
  • Assists General Manager by driving adherence to scheduling, appropriately cross-training employees, and monitoring productivity
  • A standard bearer and drives accountability of recipe adherence, technique, plating, product quality and freshness, and all food preparation with superior attention to detail
  • Responsible for all kitchen training, ongoing development, and mentoring of back of the house employees in conjunction with the General Manager
  • Ensures that employee training programs is followed and promotes learning and skill improvement
  • Responsible for daily purchasing, receiving, storage and preparation of all food products in concert with the General Manager
  • Ensures that all food products meet company recipe specifications for preparation, presentation, and quality
  • Drives and ensures that timing standards are met during production
  • A standard bearer of guest service/philosophy and drives accountability of food quality standards for food at all times
  • Promotes teamwork and unity between back of house and front to house crew by creating atmosphere of open communication
  • Ensures compliance with health, sanitation, safety, and employment regulations
  • Communicates and reinforces standards and regulations to all crewmembers
  • Ensures that kitchen is clean and maintained to company standards at all times
  • Provides a safe and clean environment for crewmembers
  • Performs other lawful duties and responsibilities required or requested by management
