Job Requirements

  • At least five years of kitchen management and operational experience
  • Culinary degree or equivalent experience preferred
  • Required current Serv Safe Managers Certification
  • Strong events management background
  • Financial acumen in budgeting, forecasting, and inventory
  • Ability to work flexible hours including holidays and weekends
  • Must be at least 21 years of age
  • Ability to lift up to 55 lbs
  • Able to sit or stand for long periods and work on computer for extended time
  • Compliance with sanitation standards
  • Ability to work in warm and cold climates and exposed to noise and fumes
  • Must possess effective leadership and communication skills
  • Knowledge of food and beverage operations
  • Detail-oriented and strong problem-solving ability

Job Qualifications

  • Culinary degree or equivalent experience preferred
  • Proven track record of high-level kitchen management
  • Experience managing multiple culinary concepts preferred
  • At least five years of kitchen management and operational experience
  • Strong events background including planning and execution
  • Required current Serv Safe Managers Certification
  • Elite communication skills written, verbal and electronic
  • Financial acumen including developing COGS line, budgeting, forecasting and inventory management
  • Experience with Microsoft Suite preferred
  • Attention to detail and high-pressure problem-solving skills
  • Ability to work flexible schedule including days, evenings, weekends and holidays

Job Duties

  • Coordinate the selection, training, development, and evaluation of employees and managers in kitchens through effective management and leadership
  • Adopt and display a commitment to the overall branding strategy of Nelson's Green Brier Distillery
  • Maintain impeccable organization and cleanliness of kitchen, walk-ins and storage areas
  • Manage meal services and ensure food is prepared to expectation
  • Work in complete partnership with FOH leadership exhibiting high communication, joint problem solving and driving toward best practices
  • Build and maintain a cooperative and inclusive culture across the kitchen team while maintaining quality, fostering respect, and encouraging creativity
  • Assist in planning and developing seasonal menus considering product availability, food cost, and business volume
  • Control labor and operating expenses through effective planning, budgeting and purchasing decisions
  • Follow standard operating procedures to report equipment needs and issues timely
  • Ensure sanitation standards per local, state, and federal regulations
  • Set up control systems to assure quality and consistency of food preparation
  • Collaborate with culinary leadership to innovate and create branded menus and event items
  • Schedule kitchen staff weekly to meet business demand
  • Collaborate with hospitality leadership, brand team, and distillery operations
  • Participate in food-related marketing and PR opportunities
  • Perform all related duties as assigned by Culinary Director and Head of Hospitality
