The role of Head Chef within Disney Cruise Line is a prestigious and vital leadership position designed for an experienced culinary professional who thrives in high-volume, fast-paced environments. Reporting directly to the Assistant Manager of Food Operations and holding an Officer-level rank, the Head Chef will lead the culinary team onboard one of Disney’s majestic cruise ships. The Head Chef is responsible for overseeing seamless culinary operations in assigned galleys and hotel stores, ensuring adherence to company recipes, quality standards, and food safety protocols.

Managing procurement through the Materials Management System with efficiency and precision to prepare up to 3,000 meals daily is a core responsibility, alongside inventory control and maintaining kitchen equipment. Job Requirements
- A valid passport and C1/D Seaman's visa (documents provided by DCL)
- completion of a pre-employment medical
- successful criminal background check
- provision of approved work shoes
- willingness to live and work on a Disney Cruise Line vessel
- adherence to safety protocols onboard
- commitment to a drug-free workplace with drug/alcohol testing
- over 4 years of leadership experience in a high-volume culinary setting
- certified working chef or Culinary Arts degree
- essential shipboard experience

- ability to calculate and control costs while understanding budget impacts
- experience writing and developing high-quality menus based on seasonal availability
- expertise in writing and costing recipes while training the culinary team to execute them at high standards
- demonstrated natural initiative and leadership in managing diverse areas
- ability to perform under pressure, meeting tight deadlines and financial objectives
- excellent written and verbal communication skills
Job Duties
- Adhere to company recipes and guidelines, ensuring consistency in food presentation and audits
- achieve food cost budgets and targets set by the onboard Food Manager
- utilize the Materials Management System (MMS) to order supplies for preparing up to 3,000 meals daily
- manage inventory control, including par levels and replenishment
- oversee the maintenance of kitchen equipment and address repair needs promptly
- conduct staff meetings to foster communication and improve team performance
- lead buffet, à la carte, production, and line services
- provide leadership to all direct reports, managing personnel files, conducting performance reviews, and ensuring compliance with MLC regulations
