The role of Head Chef at Disney Cruise Line is a vital leadership position within their culinary operations. Reporting directly to the Assistant Manager of Food Operations as an Officer-level team member, the Head Chef leads the ship's culinary team responsible for preparing up to 3,000 meals daily. This position requires overseeing all food service activities within the assigned galley and hotel stores, ensuring seamless kitchen operations and maintaining the highest culinary standards. The Head Chef coordinates special group menus, ensures adherence to company recipes, controls food costs, and manages inventory levels using the Materials Management System (MMS). Additionally, the role includes conducting thorough inspections and audits to guarantee consistency and quality in food presentation.

In this dynamic and high-pressure maritime environment, the Head Chef plays a crucial role in staff development through training and performance management. This includes leading team meetings, managing personnel files, conducting performance reviews, and ensuring compliance with Maritime Labour Convention (MLC) regulations. Job Requirements

Job Qualifications

  • Over 4 years of leadership experience in a high-volume culinary operation within a hotel or restaurant
  • certified working chef or degree in Culinary Arts
  • essential shipboard experience
  • proven career progression in the culinary field
  • strong knowledge of food and beverage products, services, and equipment
  • ability to calculate and control costs while understanding budget impacts
  • experience writing and developing high-quality menus based on seasonal availability
  • expertise in writing and costing recipes while training the culinary team to execute them at high standards
  • demonstrated natural initiative and leadership in managing diverse areas
  • ability to perform under pressure meeting tight deadlines and financial objectives
  • excellent written and verbal communication skills
  • preferred college degree in Culinary Arts

Job Duties

  • Adhere to company recipes and guidelines ensuring consistency in food presentation and audits
  • achieve food cost budgets and targets set by the onboard Food Manager
  • utilize the Materials Management System (MMS) to order supplies for preparing up to 3,000 meals daily
  • manage inventory control including par levels and replenishment
  • oversee maintenance of kitchen equipment and address repair needs promptly
  • conduct staff meetings to foster communication and improve team performance
  • lead buffet, à la carte, production, and line services
  • provide leadership to all direct reports managing personnel files conducting performance reviews and ensuring compliance with MLC regulations
