The position involves overseeing financial operations to meet restaurant objectives by forecasting requirements, preparing budgets, scheduling expenditures, analyzing variances, and initiating corrective actions. Effective scheduling using templates is a key part of maintaining operational efficiency. Cost control is a critical responsibility, involving reviewing portion controls, minimizing waste in food, non-food goods like paper products, and labor, along with conducting regular and accurate inventories.
Ensuring compliance with all relevant Alcoholic Beverage Commission (ABC) regulations and other federal, state, county, and city laws, including landlord lease requirements, forms a major component of litigation control duties. The role also requires maintaining a safe, secure, and healthy environment by enforcing sanitation standards and legal regulations, developing disaster plans, and overseeing security and sprinkler systems as well as property maintenance such as parking lots and walkways.
Ambiance control is equally important; this involves managing the restaurant’s lighting, music, table setups, equipment, and live music arrangements to create a welcoming and comfortable atmosphere for guests. Continuing education is encouraged, including participation in professional development opportunities, staying current with industry publications, maintaining networks, and engaging in professional organizations to enhance skills and knowledge.
Daily duties include completing opening and closing checklists, maintaining daily "Taste-Plate" logs, supporting line operations, preparing prep lists, and ordering food and supplies accurately to par level. Weekly and monthly responsibilities include ordering food, chemicals, and paper goods, as well as overseeing building maintenance.
