The Four Seasons Resort is currently seeking a skilled Grill Cook who is passionate about culinary excellence and delivering high-quality food preparation to enhance the guest experience. This role is vital within the culinary team, as it requires maintaining precise food preparation standards in terms of quality, safety, and presentation. The Grill Cook will work closely with colleagues and supervisors in a professional and respectful atmosphere, operating a variety of kitchen machinery such as deep fryers, broilers, stoves, and flat-top grills. The responsibility also includes managing food inventory and adhering strictly to food safety guidelines including proper temperature storage and date labeling of all food containers.
In addition to food preparation, the Grill Cook is expected to provide leadership by delegating tasks to junior cooks and effectively collaborating with the front-of-house team to ensure a seamless dining experience. The role demands flexibility in shifts, discretion in handling special requests, and a keen focus on minimizing waste through careful portion control and inventory management. Other key responsibilities include developing daily specials and pricing them appropriately, overseeing kitchen safety protocols especially regarding allergens, and managing equipment training. Compliance with Steritech and Health Department standards is essential to maintaining the highest industry standards.
The ideal candidate will bring a minimum of two years of culinary experience, particularly in grilling, and a strong knowledge of advanced culinary techniques and food presentation. Completion of culinary school or equivalent experience combined with the ability to work efficiently under pressure while managing multiple tasks will be key for success in this role. Preferred qualifications include prior experience working in luxury resorts and leadership capabilities within kitchen operations, as well as creativity in menu development to cater to special dietary needs.

Job Duties
- operate, maintain, and clean kitchen machinery including deep fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat top grills
- date all food containers and rotate perishables as per policies, ensuring items are stored at proper temperatures
- manage food inventory, check for shortages, and return unused food items to designated storage areas while adhering to food safety standards
- provide leadership by delegating tasks to cooks rated at levels 3 and 4
- work flexible shifts as required and demonstrate discretion regarding quality, timing, and special requests
- collaborate effectively with the front-of-house team to ensure smooth service
- develop daily specials and ensure they are priced accordingly
- oversee safety in the kitchen, ensuring proper handling of allergens, and manage equipment training and temperature controls
- prepare food according to guest orders, following recipe guidelines, portion control, and presentation standards
- ensure that food preparation does not exceed estimated needs to avoid surplus waste
- assist with food procurement from the store and manage daily operations as directed by the Chef
- foster a positive work environment by professionally resolving challenges related to products, staffing, and timing
- follow Steritech and Health Department guidelines to ensure compliance with industry standards
- work efficiently in multiple kitchen stations, excelling at two or more
- help manage food costs, reducing waste and spoilage
- ensure proper rotation, labeling, and dating of products to maintain an organized kitchen
- obtain approval from the Chef or Cook One before deviating from the established schedule
- work 40 hours per week, with flexibility for shift adjustments and potential overtime
