We are currently looking to add a skilled and service-oriented Banquet Sous Chef to our dynamic culinary team. This is a key leadership role within our kitchen operations, responsible for overseeing both immediate and long-term kitchen planning and management. The Banquet Sous Chef will play a central role in maintaining high standards of food quality, safety, and cost control, ensuring that all dishes prepared meet both corporate and brand expectations. This role requires a leader who can efficiently manage a high-performing team of kitchen staff and managers, fostering a positive culture that emphasizes employee growth and safety.

The position entails a broad scope of responsibilities, including recruitment, training, performance management, and conflict resolution within the culinary team. The successful candidate will lead by example in enforcing kitchen sanitation and safety protocols in compliance with federal, state, corporate, and franchise regulations, creating a work environment that prioritizes safety and operational excellence. Menu development and innovation will also be critical, requiring the Banquet Sous Chef to work collaboratively within corporate guidelines to craft menus that enhance guest satisfaction and improve profitability.

Budget management forms another crucial aspect of this role, where the Sous Chef will monitor and optimize labor and food costs using forecasting and analysis to meet financial objectives. The candidate must demonstrate strong multitasking abilities, exceptional teamwork, and a commitment to exceeding guest expectations. Flexibility to work evenings, weekends, and holidays is essential for this role.

Job Duties

  • Plan and manage the procurement, production, preparation and presentation of all food in the hotel in a safe, sanitary, cost effective manner
  • Monitor and control the maintenance/sanitation of kitchen, equipment and related areas to ensure a healthy, safe work environment, which meets/exceeds federal, state, corporate, and franchise standards and regulations
  • Develop, recommend, implement and manage the department's budget
  • Continually analyze, forecast, monitor and control the labor and food costs through various methods to meet/exceed management/budget objectives
  • Develop and implement menus and back-up (use records, production lists, pars, training, etc.) within corporate guidelines to continually improve revenues and profit margins while maintaining quality
  • Execute and promote the Accident Prevention Program to minimize liabilities and related expenses
  • Hire, train, develop, empower, coach and counsel kitchen associates and managers
