The role of the French Pastry Chef at Restaurant Associates is an exceptional opportunity for experienced and creatively driven professionals specialized in French pastry arts. This position is based in a brand new, gourmet French food and delicatessen outlet located at 1100 Avenue of the Americas in New York City. The French Pastry Chef will play a crucial role in shaping the dessert menu and overall pastry offerings for a fine dining restaurant seating 75 to 100 guests. This full-time position offers a competitive annual salary ranging from $100,000 to $110,000, complemented by a comprehensive benefits package.
As the French Pastry Chef, you will be responsible for overseeing the daily operations of the pastry department, including preparation, production, inventory management, and ordering of all pastry ingredients and supplies. You will work closely with the Executive Chef to ensure culinary excellence and maintain the highest standards in food safety, sanitation, and presentation according to HACCP guidelines. Your expertise in French pastry techniques and creativity will be essential in developing innovative menus that highlight seasonal ingredients, enhancing the dining experience for guests. Additionally, you will manage a team of hourly associates, providing leadership in hiring, training, coaching, and performance development to build a highly skilled and motivated pastry department.
This role requires strong organizational skills, the ability to manage high-volume production efficiently, and an unwavering commitment to quality and cleanliness in food handling practices. Knowledge of current culinary trends, cost controls, and proficiency in Microsoft Office will support your operational success. Certification in ServSafe or Department of Health food handling standards, while not mandatory, will be regarded as a strong asset. Job Requirements

- Minimum three years of French pastry experience in upscale, high-volume restaurants

Job Duties
- Prepare, produce, and oversee the daily operations of the pastry department ensuring the highest standards of quality and presentation
- Manage inventory and place orders for pastry ingredients and supplies to support efficient production and minimize waste
- Manage the high-volume wholesale of the operation
- Properly handle, prepare, and store perishable products in accordance with food safety and quality standards
- Maintain strict compliance with HACCP guidelines and all food safety, sanitation, and health regulations
- Ensure a clean, organized, and safe work environment while promoting best practices in food handling and production
- Support the Executive Chef with menu development and pastry innovation
