The Food Preparation Supervisor position is a pivotal role within Aramark at Marion Correctional Institution, where the primary responsibility revolves around overseeing inmates involved in meal preparation and food item production according to established production plans. This supervisory role demands strong leadership abilities, organizational skills, and adherence to strict food safety and security standards. Job Requirements
- must be at least 18 years of age
- minimum of one year of experience in food preparation or a related role preferred
- prior supervisory experience is a plus
- experience working in a correctional environment is preferred
- ability to lift bend push pull and stand or walk for extended periods
- willingness to wear required uniforms and personal protective equipment
Job Qualifications

- knowledge of and adherence to safety policies and procedures

Job Duties
- adhere to food preparation and production standards established by Aramark
- review and approve production and temperature logs
- provide direct supervision of inmates involved in food preparation and tray assembly
- implement processes to ensure meals are delivered in a timely and efficient manner
- assist with food preparation and service as needed
- post and communicate cooking instructions ensuring accurate portions and accommodation of special diets
- store food items safely and in an organized manner to maintain a hazard-free environment
- follow all security procedures and ensure storage areas remain locked at all times
- confirm all kitchen equipment utensils and keys are returned to secured locations
- create and manage schedules for food handlers inmates and cafeteria staff to ensure proper coverage and sanitation practices
- supervise and evaluate staff performance while promoting teamwork efficiency and professional development
- assist with inventory control including receiving and proper storage of food and supplies
- process purchase orders as needed and maintain accurate inventory records
- monitor and document maintenance needs for kitchen equipment
- follow HACCP guidelines for safe food handling storage and preparation
- monitor and record food safety and temperature logs taking corrective action when necessary
- coordinate food production according to the 5 P's process participation extraction creation portion management and after-process
