Job Requirements

  • must be at least 18 years of age
  • minimum of one year of experience in food preparation or a related role preferred
  • prior supervisory experience is a plus
  • experience working in a correctional environment is preferred
  • ability to lift bend push pull and stand or walk for extended periods
  • willingness to wear required uniforms and personal protective equipment

Job Qualifications

  • food safety certification required
  • ability to motivate and manage inmates and team members to meet food production quality and quantity goals
  • ability to work independently with minimal supervision
  • demonstrated judgment and professionalism in a correctional setting
  • knowledge of and adherence to safety policies and procedures
  • ability to meet and maintain security clearance requirements

Job Duties

  • adhere to food preparation and production standards established by Aramark
  • review and approve production and temperature logs
  • provide direct supervision of inmates involved in food preparation and tray assembly
  • implement processes to ensure meals are delivered in a timely and efficient manner
  • assist with food preparation and service as needed
  • post and communicate cooking instructions ensuring accurate portions and accommodation of special diets
  • store food items safely and in an organized manner to maintain a hazard-free environment
  • follow all security procedures and ensure storage areas remain locked at all times
  • confirm all kitchen equipment utensils and keys are returned to secured locations
  • create and manage schedules for food handlers inmates and cafeteria staff to ensure proper coverage and sanitation practices
  • supervise and evaluate staff performance while promoting teamwork efficiency and professional development
  • assist with inventory control including receiving and proper storage of food and supplies
  • process purchase orders as needed and maintain accurate inventory records
  • monitor and document maintenance needs for kitchen equipment
  • follow HACCP guidelines for safe food handling storage and preparation
  • monitor and record food safety and temperature logs taking corrective action when necessary
  • coordinate food production according to the 5 P's process participation extraction creation portion management and after-process
